DIRECTIONS Wearing gloves, remove the stems from all of the jalapeno peppers. The easiest way to do this is to slice a small disc off of the stem-end along with the stem. Discard the stems. Slice the peppers into uniform 1/8-1/4 inch rounds. Set aside. In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic and cayenne pepper to a boil. Reduce heat and simmer for 5 minutes. Add the pepper slices and simmer for exactly 4 minutes. Use a slotted spoon to transfer the peppers, loading into clean, sterile canning jars to within 1/4 inch of the upper rim of the jar. Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes. Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a cooking chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger-tip tightness. *If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars, too. It’s wonderful brushed on meat on the grill or added to potato salad or, or, or… In short, don’t toss it out! Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints. When timer goes off, use canning tongs to transfer the jars to a cooling rack. Leave them to cool, undisturbed, for 24 hours. When fully cooled, wipe them with a clean, damp washcloth then label. Allow to mellow for at least two weeks, but preferably a month before eating. Or don’t.😊

I've read this over several times and I still might have missed it, but I don't recall seeing any measurements given for the ingredients that go into the syrup, or for the amount of peppers. It might be a good idea to add them in! ;)

But hopefully someone will put up a guideline of measurements for example :- say if canning 12 single quart jars. I suggest you go through and checkout the various canning videos on Simple Living Alaska (Eric and Ariel). They both generally advise the quantities of the produce and liquids they used while doing their recipes. 😀

I am 71 years old. Just watching you bent over picking cucumbers or anything, causes my back to ache from just watching. Growing up on a market garden farm and picking when I was young, was one thing. The idea of doing it now, makes me shudder.

Seems like the plants are so much smaller from the past, but more peppers. I am so happy to see yours producing. We lost out squash to worms, Peppers grew enormous, but never made. Starting over again....for the umpteenth time. 🤣🤣

Cowboy Candy? The recipe is pretty basic, but you can look on KZbin for a recipe! : ) If you mix red and green jalapeños, then they would sell great for the holidays! Some folks chop their jalapeño’s instead of slicing them. Gives a little different look, especially if you mix colors. Now if you are really daring, add just a few Habaneros to the mix! : )

I can cowboy candy every year. I always can it in 1/2 pint wide mouth jars. I give some out, use plenty around the place. Every party I take some and just dump it on a bar of soften cream cheese to dip your favorite cracker in. The left over syrup makes a AMAZING glaze for pretty much anything. I also add some to chicken or pork marinade/ brine. You guys should do it. Recipe for sea level but I increased time based off of my altitude, follow common canning guideline for altitude based off of your location. Here is my recipe. Ingredients • 3 pounds fresh firm, jalapeno peppers, washed Sliced or diced (Diced is better) • 2 cups cider vinegar • 6 cups white granulated sugar • 1/2 teaspoon turmeric • 1/2 teaspoon celery seed • 1 1/2 teaspoon garlic powder OR 3 teaspoons granulated garlic (I use powder) • 1 teaspoon ground cayenne pepper or crushed red pepper flakes (I use flakes) Instructions • Wearing gloves, remove the stems from all of the jalapeno peppers. The easiest way to do this is to slice a small disc off of the stem-end along with the stem. Discard the stems. • Slice the peppers into uniform 1/8-1/4 inch rounds OR dice in a processor. Set aside. • In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic and cayenne pepper/ pepper flakes to a boil. Reduce heat and simmer for 5 minutes. Raise the heat to boiling again, add the pepper slices, return to a hard boil, then reduce the heat again and simmer for exactly 4 minutes. Use a slotted spoon to transfer the peppers, loading into clean, sterile canning jars to within 1/4 inch of the upper rim of the jar. Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes. • Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a cooking chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger-tip tightness. • *If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars, too. I've used a couple different cowboy candy recipes, and honestly, they all turned out well. There wasn't a lot of taste difference between them. If you want to use it like a relish, on sandwiches and such, it's better to chop up the peppers instead of slicing into rings. For those who don't know, cowboy candy is a sweet pickled jalapeno.

I tried "Wild Violet" corn for my first planting this year. The kennels are white and some light purple, but when they are cooked, the kennels turn, gold, yellow and black. It's a super sweet variety and did really well for me this year, but the seeds are about double the price of the normal yellow/white types.
