I still don't know why bicycles don't have spring loading brakes that can be released with a button for extra speed or help with climbing hills. Is it because of safety concerns, one might e.g. unintentionally trigger the release and lose control over the bicycle and cause an accident?

I see no use for any of these mechanisms besides basic demonstrations. Most of these complex mechanisms can be achieved with a much simpler solution.
