Was your buttercreAm covered cake chilled when you applied water to cover the sides with the fondant? Or room temp?

Chilled. I like working with cold cake, however, it's best to let it come down to room temp to settle before you cover the sides with buttercream so that any air trapped between the layers can escape, and then chill it. :)
