I used to have such a high tolerance for spicy, but I've had to eat much less of it for a few years, so it doesn't take much to be too much for me anymore. Old-me might have started with a 3 or 4 there. :)

New subscriber here. Enjoyed your taste test of curry ramen. I have always been told that it is improper to place your chopsticks upright in a bowl of rice as it is how one makes an offering to the dead. If you do that you are signifying to your family that you are dead! Definitely not good! 🤣. However, foreigners are usually given "a pass" on this behavior because they are known to be generally ignorant of proper Japanese etiquette. I am looking forward to your upcoming programs. Take care and have a pleasant week. ❤🛫🙏🌎

There is no need to order the large bowls. In Japan i always take the smaller bowls and take side dishes which makes you enjoy your food more. Also you can try other foods after that and have dessert.

Chopstick etiquette: 1. Don't leave your chopsticks vertically in your food 2. Don't pass food chopstick to chopstick. Put the food down on the plate and have the person pick it up. These two practices are related to funerals and are considered a no-no outside of funerals. 3. Don't stab your food to pick it up. 4. Don't play with your chopsticks.

Spices are actually nature’s medicinal powerhouse... they contain complex and unique compounds which, if consumed on a regular basis build a very strong immunity... in fact, this why it came into use thousands of years ago, as part of Ayurvedic lifestyle...use of spices is as much scientific as culinary skill... regrettably, I see most people outside India just ‘dump’ spices in a ‘tare’ (broth) and call it curry. The fact is that it’s very rare that we use all spices in one preparation... besides the basic (cumin seed/powder, coriander seed/powder, turmeric powder, salt and pepper) everything else is optional and varies from one recipe to another... it’s interesting how by playing around with different spices we create completely different dishes from same vegetables... no wonder, it’s so easy to be a vegetarian in India because we can go on without having to repeat the dish for months... it’s feels weird to me when I hear ‘less spicy’ or ‘too spicy’, when they actually mean ‘less HOT’ or ‘too hot’ ... this has purely to do with CHILLIES and NOT SPICES... I guess, one can argue that chillies are spice too... chillies (like tomatoes/potatoes) are vegetables with so many different varieties, each with its own unique heat and flavour... chillies are fascinating and there is a whole wealth of study on it, especially from South American cultures... how it balances blood sugars, how the heat triggers the release of endorphins and so on. Spices and chillies are acquired taste, which is why the tolerance varies from one culture to another depending of how often (not necessarily how much) it is used. If I have to sum it up, spices = taste/flavour chillies = heat salts = depth/flavour enhancer I guess, I am just in awe with how much there is to learn. Speaking of which, thanks a lot Rion! because I do learn quite a lot about food and places in Japan from you
