Also, have not encountered Ali on this channel before but he is great! Very knowledgeable, communicates in a not-too-chefy way and enjoyable presence. Not to bad on the eyes either.

I love tomatoes, so this video was an absolute win. But my favorite hack was everything he said about tomato stems at the end. Can Epicurious please make a series of videos about nose-to-tail/root-to-leaf cooking? The idea of using every part of the animal/plant, like that show Scraps: Parts Uneaten. I'd love to see this channel addressing food waste and all the creative things you can do with parts of animals/plants that most people throw away!

This guy makes me look at tomatoes in a completely different way! I had no idea you could do so much with them beyond basic salads and sauces. The ketchup pickle trick for bad tomatoes is genius - totally trying that on my next winter burger. Also love how he doesn't waste anything - even using the stems for vinegar is pretty cool. The tomato water tricks are my favorite par thought - especially using it in an egg wash for that pretzel-like effect. Such a deep dive into one ingredient, but he keeps it fun and practical.

Both a revelation and completely approachable. I absolutely loved this video and the range of information shared. So many things I want to try. I've known tomatoes as both set and savory all my life, because my granny made tomato preserves (jam). I love them, and have occasionally made them for myself. I've never seen them mixed with other fruit, however. Really exciting to see these new to me ideas.

I loved this! I discovered the tomato powder when I decised to dehydrate the skins/ seeds after processing sauce in the food mill. A gret thickener and flavor enhancer. Loved seeing all these other ideas. We love growing tomatos but have a short season in the PNW. Always end up with less than perfectly ripe tomatos.

Not on tomatoes, because they need to be pretty ripe to be edible. But usually it is hybrides so you end up with different and often worse tomatoes than you originally had. Or they are even sterile and you won't harvest anything.

When I make pico, I'll salt the diced tomatoes in a strainer and leave it over top another bowl for 10 minutes. Usually I'll drink most of this tomato water but this is a great way to extract it, plus you have a container of not watered-down pico! Also, I make smoked salsa and it is S tier. Ali enjoys smokey tomatoes too. I'm glad real recognizes real. edit: .....t-t-t-tomato pie?!?!

@@SFOPS Something lately I started doing was flavor extractions on herbs. For example, instead of adding cilantro straight to rice or pico, I'll chop it up finely, then add in some lime juice and vinegar, mash it with a spoon a little bit and leave it in the fridge for a few hours, then mix it in.

Tomatoes are one of those things that I love certain ways, but make me gag in other ways. Tomato sauce is great, and I can eat it just by itself, but if you separate the water and solids, I can't stomach either of them alone. The pulp and tomato water you show are examples of things that would make me hurl, but I could eat them just fine when they are together.

Another use for tomato skins is to thicken sauce. I know it sounds obvious but so many recipes call for peeling the tomatoes before using them. Why not cook the tomatoes whole or halved and strain the skins out at the end so you can get all the flavor and pectin out of them first? You can even cook the peels separately in just a little liquid and stain them if your concerned about not getting all the pieces out or removing the texture and additional ingredients in your sauce. It annoys me so much when recipes (like for apple pie) call for you to remove skins and then add back in a commercial pectin product to thicken it up.... Just use the existing pectin!

I avoid cooking tomatoes in a cast iron skillet; it damages the seasoning of the pan. It might be better to roast them on a cookie sheet in the oven.
