Canada is a great starting nation, you can peacefully build up and create a small but elite tank force with a good focus tree. You’ll learn how to build and use tank divisions and it won’t be a headache like any major in Europe. After that i’d say go for Germany since they’re the easiest of the majors (due to how bad the ai is). It’s all trial and error and throwing yourself at it until you solve it though, good luck lad! And make sure to not worry about Navy like at all. It’s too much of a headache to manage and understand when you should be learning the army and air parts of warfare. You could just steal your way into a navy in peace deals and this works as the ai tends to just not build good ships so a stolen navy even if outdated for the tech still fulfills the job it needs to.
