Cubed tongue (lengua) is really good in tacos and burritos. It's slightly gamey, but it's the most tender meat you'll ever have (if the place cooks it right). It's my favorite meat for Mexican food, by far. Melts in your mouth. Once you get over the "weird" factor, it's great. Outside of Mexican, I've only ever had it at some Korean BBQ places, and it's not as good. It comes in large, thin, circular slices, and IMO it just doesn't really work very well - it's not terrible or anything, but there are so many better sliced meat options. You might as well just stick with bacon/ham and skip the tongue on this sandwich (it tastes pretty similar to Canadian bacon, I'd say). It doesn't provide much extra flavor. It's just not as good when it's sliced like that, and doesn't get as tender - then again, I was cooking it myself on the grill at the Korean places, and I also may have overcooked it like Bert did here.
