I have Char Griller 2823, kinda the cheapo model. Bought a firebox and converted it into an offset. Yesterday, I did this. It was a throw in after I had smoked some bird legs, chuck roast, and ringlets. It was my first time trying and it came out well. I debated using a cast iron to finish, but like you, I just used the grates in the firebox. LOL. My grandson kinda said he was a little tired of all the meat smoking I do. He scarfed this steak down FAST!!!

That stake looks great! I can almost taste it. I might have to go to the store tomorrow and get a stake. I've smoked and seared tri-tip before but they are hard to find in my area not to say meat itself is getting hard to find here. Good job!

Great steak, great video. It looked delicious. I think I used to own that exact grill. I did have an issue though with the drum warping and the grates falling down. The steel should have been thicker or reinforced.

I'm just now starting to get into reverse searing with my smoker as well. From my experience if you let the steak rest from the smoker for about 20 minutes then sear it it will keep it a lot more tender.

Hey Brother John! Thanks for watching and I appreciate your comment! I agree, proper resting makes a difference. Cut and quality have a lot to do with it also on a steak but absolutely, rest!

@@TonyToneBBQ interesting. Never heard of resting the steak then searing, always have seen videos of searing right after smoking, like you did. going to smoke a picanha roast today with reverse sear. Not sure if I'm going to let it rest before searing🤷♂

Yeah, they all get this. Metal just gets too hot for the paint. It helps to hit it with a little Rust-Oleum Engine Block paint every now and then. Thanks for watching!

@@TonyToneBBQlooks like your grates could use a redo on their seasoning. I’ve had the same type grill since 09, love the thing, but upkeep on the grates are pretty important. You don’t wanna be eating off rusty grates. So I coat the grates with oil, get the coals hot as heck, close the grill and bake em for an hour, flip em scrap em recoat with oil, and refill coals. Do that once again leaving the top grates for one last run. You’ll be good for the season if not two if you take them in during non use…
