I want to apologize in advance about the audio, my neighbor has a rusty whirly bird attic fan that you can hear whistling in the background. I also did not have a microphone at the time.
I have been grilling using a charcoal weber grill since 2013 and in this video I share with you my top 10 Charcoal Grilling tips. I made this video to help out people that are new to charcoal grilling. There's a nice aroma and experience that comes from grilling on a charcoal grill versus a gas/propane grill.
When lighting the newspaper for the charcoal chimney, use about 1.5 to 2 full sheets. After you light one side of the newspaper, proceed to light the opposite side.
Safe Grilling Temperatures:
Fresh Beef - 145 F
Pork - 145 F
Poultry - 165 F
Ground meats including beef 165
Fish with fins - 145

*Marinades - Thanks to those chiming in regarding the reuse of marinade. I just learned something new. You can reuse the marinade that came into contact with raw mean ONLY if you boil it. Boiling it kills the harmful bacteria. If you do this, use it the same day.

Even though I grew up using charcoal I now find myself wondering why dad would place the charcoal on one side of the grill and since he passed away I couldn’t ask but finding your channel had shown me why dad would grill the way he did. Your friends and family are going to wanna come over to eat more often, haha. When I first started grilling I would buy carne asada and marinated chicken from different local Latino meat markets so I can compare the taste. Over time I bought less from those markets and started prepping my own meats. Good times!

That "2 zone" has never worked for me....I get better results with the coals spreaded around equally.....the tip to not letting your food burn is to keep flipping it every few minutes depending on the type of meat that you're cooking....my grandmother taught me that.

I recently bought a Weber charcoal grill for myself, same one as yours actually. I would have never thought about the two zone cooking or even where the vent on the lid should go for certain cooks. This was very helpful and easy to understand. Takes a little bit of the anxiety of doing it for the first time very soon. Thank you!!

Yeah, there some details that help improve the grilling experience. I love youtube because you can learn so much from others. I tend to check videos when i'm doing something for the first time. For example, I recently had to replace my radiator on my car and watching a youtube video gave me the confidence to do it myself. Now on to the next car repair, hehe.

I agree, parents in this generation are more wealth-centered and forget that its important to teach their kids skills and knowledge they know in order to help their kids thrive. I have a 7 year old and I work hard to teach him what I know. I have a 1year old daughter and I plan to do the same with her. I hope your dad inspired you to educate yourself as much as possible, sounds like he was an awesome dad. RIP to your daddy.

Great video! I've been cooking on Webber kettles for over 20 yrs. While experience is always the best teacher, following these simple tips will put one far ahead of other beginner grillers. I learned most of this from trial and error and it took years to master. And you are absolutely right. For standard grilling, the Webber kettle is the go to because it is so versitile. Keep up the great work!

Pretty good advice here. A lot of these practices come from being a good cook in general. I actually bust out our grill for the first time in ages cause it was a nice day out and I wanted to cook some good food for my fam. Glad to know I did things right. TY!

I learned that the hard way too, haha. I like to make my steaks medium rare and my girl associates that with raw so she tends to think I undercook everything now. I don't mind though, that just means there's more grilled food for me, hehe.

Disregard tip #3 and use one pair and always keep it close to the heat or over the heat to kill bacteria, if you use two pairs one to out the meat in the grill-then the second pair is still gonna be handling raw meat when you flip for the first time which in case it serves no point.

Thanks for sharing! My wife bought one of these grills about a month ago at a yard sale. The people were moving and selling everything. She bought it for $10.00 and it was in very good condition. She brought it home and we cleaned it up. We plan on cooking on it this weekend. :)

Super cool, you guys scored a really good deal on that grill. I paid $150 for the one I have. It is a reasonable price. I've seen people pay several hundred for those "green egg" kamado style smokers. I can't justify a purchase like that for myself. Next I want to get blackstone griddle.

One tip as well that I saw on another video. On that particular model Weber, the guy had marked the canister on the bottom, drawing lines where the bottom vent was open, say, 20%, 50% 80%. You can eyeball it, of course, but I thought it was a great idea and I thought that I'd pass it on to you.

Thanks for that tip. I always find myself peeking in at the top while adjusting the vent at the bottom. Marking it would make it easier to adjust the vent.

I have a really dumb question! (Total beginner here..) The first time you flip (steak is seared on bottom, still raw on top), you use the raw meat tongs or the cooked meat tongs?! Lol

Finally someone talks about cross-contamination Thank you!!! So many people get sick at backyard BBQs and think it's because they ate to much. Sanitation is so critical to a successful bbq.

@@TigreCorazon Raw Tongs! They will contaminate the cooked side, but it will keep cooking so it will be fine. If you use the Cooked Tongs, they would get contaminated, and you would have to wash them before touching food that is ready to eat. Good question!

Thatnks for this video! I used the 2 zone method and it worked great! I had 4 pork chops and 6 chicken breasts to cooks. I had been struggling with sustaining the heat and I took your advice and all came out really well!

Awesome find in the woods! My jumbo joe doesn't have a thermometer. Some ppl drill a hole and attach one and others just put a thermometer on the grill grate that stands up on its own.

Weber sells replacement parts for the Smokey Joe so those grills can be completely refurbished. I’ve owned 3 of them. They’re a bit too small to do the 2-zone method, though. They’re really best at direct heat cooking.

You covered ALL expects of griling! I was wondering WHY my heat kept goin out n why my heat wasn't HOT! Well it was bc I had the bottom vent CLOSE! After opening ALL vents my heat kept for a long time and stayed HOT! Thank u sooo much! God Bless!

Glad to be able to help a fellow griller! I usually just keep that lower vent wide open. Only time I close it up a bit is when I try to smoke some pork ribs on the kettle grill. For the ribs, I also add a water pan above the coals to help bring down the temps.

Glad you liked the video! You'll still go through some trials and some errors as you continue to progress, just not as catastrophic, haha. Food poisoning yourself sucks balls, so keep those temps in mind. Keep an eye on expiration dates on everything you consume. I recently had some dried blueberries that were two months past due that made me sick.

Miguel Chavez i'd post some pics if i could. I marinated them overnight in some brown sugar burbon sauce and a mild rub. Was a bit spicy hot for some. Took about 7hrs. Taking the grill to work and grilling 2 chickens. Will keep you posted. Keep up the great channel buddy!!

Great tips! I abide by them all, been charcoal grilling for almost 20 years. The only thing I do differently is that I strictly use mesquite charcoal lumps. As far as the charcoal starter, I've found that rolling 3 or 4 napkins and soaking them in avocado oil and firing them directly beneath the charcoal already in place without a starter works amazing!!!! Thanks for the vid

Thanks for the feedback! I'll give the mesquite charcoal lumps a try one day. I agree with you on the different ways of lighting the coals with the chimney. I have also used napkins soaked in oil and it works. I've been considering switching away from newspaper because it produces heavy smoke and ash. I plan to buy the electric lighter you stick in the coals and see how that works out for me.

Thanks brother! I am surprised how well my weber holds up to the elements considering I have not had a cover on it for four years. The only issue I have had was the bottom round part that holds the ash tray seems to be made of aluminum and after the ashes are loaded with fat and grease it gets heavy and mine fell off. I used a JB Weld SteekStik putty to keep it firm in place and have had no issues for a year thus far.

Yeah, 2 zone makes a difference that not everyone appreciates unless you've tried both methods. Do you make your own jerk marinade or buy it at the store?

I’ve got Tip 11 & 12 to add to get that perfect cooking down. Get temp probes (especially if you’re smoking the meat) and always pull the meat off a few degrees prior to the finished temp you want but instantly wrap it. That’s where a lot of your juices are going to stay. When the temp begins to lower, the amount of juice leaving the fat reduces. When you allow the meat to reach final temp in a wrap, you’re able to save a lot of the juices and the flavor it carries. If you care a lot of aesthetics of your food (especially if it’s meat that will develop a nice bark like a brisket) you want to look into butcher paper. Amazon has it pretty cheap, foil will strip the bark away easier.

Those are great tips. That's a good point about removing the meat a few degrees before target temp and wrapping. It makes a difference on beef. I will look into using butcher paper, I have never tried it.

good job. If you're doing chicken, put a disposable aluminum pan next to the coals to catch the drippings. Can also bank the coals on the sides, pan in the middle.

Thanks! I typically don't use a drip pan and let everything go down and eventually into the ash tray. I know it makes for rock hard ashes but its not so bad to cleanup. Some items that are heavy in fat I do try to use a drip pan. If you trim the extra fat on poultry it shouldn't produce too much drippings. I did bank the coals on the sides when I roasted a turkey on the kettle grill.
