This is very relaxing to watch. I don't know why. I want to stop, but I can't. It's so quiet. No residual background noises like blenders or machines running. They all are BEAUTIFUL!! They look like shiny pieces of artwork. Tempering the chocolate, so that it shines, isn't easy. I love chocolate.

First off, most of this was wasted energy that could have been better utilized making treats that aren't just as good when made by machines (first part of the video). Second, OMG, the garbage in the segment starting at 46:03... That's just wasted chocolate and wasted energy. He totally screwed that up and has no idea how to work with chocolate. He obviously read a recipe that didn't have proper instructions, so he thought he could grind in the shells with the nibs (since the recipe didn't tell him not to, apparently, because, you know, anyone with a brain wouldn't do that, all on their own), and then grind in the whole vanilla bean with it?! I mean, wow. He's obviously never done any of this before. If he had any valuable experience working with cocoa-everything, he just flat out would have known better than everything he did in that segment. Also, the end product of the segment before that was equally gross. Some of that dough wasn't even cooked well enough on the inside to be edible. On top of that, the outside was hard as rock. Wrong baking temperature and timing both. Yikes.

@@justrosy5 I dont know where you saw him putting the shells in the timestamp, he had 3 bowls.. 1 for full beans ( that didnt break apart ), 1 for nibs, and 1 for shells. he poured in the nibs.. not the shells.

Well, some of the steps used are needless. Like how he uses the cellophane to load the chocolate into the moulds spilling it all over the table. He could have just filled and scraped, called it a day.

I really enjoyed this video! These are some VERY excellent chocolitiers. My favorite was watching how it went from the Cacao beans, to the chocolate drink. Very time consuming, but really worth all of the effort put into making it!
