Perhaps you could fiddlle with the probilities so it likes to make water surface pixels disappear and doesn't like to make them increase

One interesting approach is 'path' water, if a particle wants to move it can test every accessible empty space through connected water, prioritizing lower spaces. This allows water to flow up with pressure.

What's the difference between your "Minimal" water and your "For" water? I'm not sure I understand the difference, don't they both move either left or right each tick?

The minimal water randomly picks a direction. If there's space to move that way, it moves. Otherwise, it does nothing. The for water does the same thing, but if it can't move, it doesn't give up. It keeps trying new random directions until it finds one it can move in (or runs out)

@@TodePond Oh, so the "For Water" might try to move left, realize that the left pixel is already taken, so it checks another pixel until a free spot is found (or if it's already searched all the appropriate neighboring pixels)
