The moon jump can happen in sonic mania when you drown, use debug mode after you drown but don't respawn. Get out of water then turn off debug when out of water.

You can actually use some of these in sonic origins while in game from what I know, except I don’t know how some of them happen in sonic origins And just so you know to access some of the sonic origins ones I’m pretty sure you need debug mode
