How realistic is it for someone from a university like that to land a top IB internship or graduate scheme? Genuinely curious, since from what I've heard it's generally limited to the top universities in the UK like Oxbridge, LSE, Warwick, UCL etc. Thank you!

Investment banks tend to hire across all Russell Group universities. Applicants are then screened based on previous work experience and relevant skills and qualifications, rather than university.
