"Danger" grows with reactivity of the compounds, and sometimes you need a certain reacitivity to do the chemical transformation that you want to do. Many reactions are done in an inert atmosphere of nitrogen or argon because the reagents react even with the humidity in the air but this reactivity is exactly what you need when brought together with the right compounds.

I once touched sodium hydroxide crystals and then quickly washed my hand without getting burned. I then dissolved those crystals in water without wearing gloves.
