This soup is quick, easy and a classic soup for the autumn and winter days. The most important thing, however, is that it tastes good and is very digestible. The parsley bread rounds off the soup as a tasty addition. With our popular TV chef Daniel you are on the safe side of a culinary taste experience.
Ingredients for 4 servings:
0.4 kg celeriac
0.1 kg floury potatoes
1 onion
1.0 l vegetable broth
0.01 l of cream
0.05 kg of butter
2-3 cloves of garlic (to taste)
salt
Preparation:
For the soup, peel the celery, potatoes, onions and garlic. Divide the celery and keep about 100 grams of cubes separately as a soup. Sweat the roughly diced celery with the potatoes, onions and garlic in butter until colorless. Deglaze with vegetable stock, fill up and let simmer for about 20 minutes. Then puree, add cream and season to taste.
Tip: Instead of celery you can also use pumpkin and instead of wheat flour you can also use spelled flour for bread.
