In this video we make applesauce from the apples harvested in the garden. Something we try to do each year. Yummy, and useful in many dishes and pastries.
Recipe:
1 kg apples
1/2 dl water
6 dl sugar / liter strained apples
Sodium benzoate (according to manufacturers recommendations)
Clean the apples, cut them in ping-pong ball sized pieces (remove the stem and flower "bud").
Add the water and slowly cook or simmer the fruit until it is soft and mushy.
Use whatever strainer machine you have and measure the total volume.
Add the sugar, let it heat up and simmer for about 5 min. Stir regularly!!
Take it off the heat, add the preservative, stir and pour on well cleaned jars.
Add food safe paraffin wax o top. Done!
Store in a moderately heated and dark place.
Will keep fresh for a year or two.

I remember 55 years ago, 3 generations gathered at harvest time to prepare foods from our properties. The last 30 years its just been me. No one cares. Children can't be forced to do anything. But they are there to eat. The old ways from Europe, are the best BTW: the expelled pulp makes great chicken feed.

Man the memories of making apple butter, fig and pear preserves with my grandparents every year just rushed back. I can even smell it! Best part was my Grandfather letting me make hand molds with paraffin wax and my Grandmother getting on to him about wasting stuff. He would always reply "Living life could never possibly be a waste of anything..." Thanks for this one brother!!!

Very good. Fifty years ago I did the same with my mom with apples from the garden. And made marmalade with bought orange - that's a smell you never forget.

Some of the best memories of my childhood where in the kitchen canning veggies, making jams and jellies with my parents and brother. Glad that you get to pass this on to your children.

Yum! Some nice thick pork chops with a side of homemade apple sauce 🤤 Like so many others have said, this reminds me of my childhood. Only we had oranges instead of apples from my grandfathers grove. All the women would sit around the kitchen table and slice up giant bowls of orange slices while telling stories and laughing and the latest gossip of course. Great memories! 🤜🤛

This is very calming to me. I love your channel! Love seeing you with your children creating memories that will stay with them a lifetime. You seem to have that perfect blend of work life / family life. We could all learn a lot from you in this regard. I love that the kids were so eager to help. But have you ever noticed that their interest always seems to dwindle once it's down to basically cooking, canning and cleaning up? : )

Love it. We add cinnamon as it cooks and squeeze the skins out with a food mill. Tasty and plenty sweet. Definitely need a canning funnel build video.

This reminds me of my grandmother. When I was a kid we used to go to visit and there was always homemade apple sauce in the freezer. Delicious!

There are some old apple trees down by our creek from the old orchard that was here and we were thinking about making apple sauce from them next time they are growing as well. Thanks for the inspiration

Nice video, Torbjörn. The applesauce looks delicious. The Atamon is also known as E211. I do not know about the wax at the end. Well, everybody cooks differently because I do not know that kind of you. I know it so, chop the apple, the core casing is removed, then add a little lemon (so that the apple does not turn brown). When the apples are all in the pot, sugar will add to it and vanilla stalk. It will simmer until the apples are almost overcooked, then it will be crushed and bottled.

Always interesting to see how common items are made in other countries. I've made apple sauce myself on many an occasion, although not in that quantity, usually making it as I need it. The parafin wax is definitely different to how I bottle things, I fill to the brim, and put the lids on when everything is still hot. As it cools, a vacuum is formed and the safety indicator on the lid pops in, you can then see you have a good seal and the contents will keep.

Very nice. My mother would usually press the remaining juice out of the trimmings and make a small batch of jelly too. It was a small consolation prize because mom wouldn't let us eat the canned goods till the snow was flying

We picked up a Johnny Apple peeler from an orchard my wife and I went to and it made making apple sauce and apple butter so much easier. Peels, removes core, spiral slices all at once.

I honestly couldn't care less about applesauce, I just don't care for it. HOWEVER, this is an amazing video! I think it is amazing that you do these family activities with your children, they are such cuties. You are a good man Torbjörn, thank you!

In Poland I do this with my family every year! Except that we don't use sodium benzoate. After boiling the apple sauce for some time, they are not likely to rot in the jar. Greetings!

Will the wax make the applesauce keep indefinitely kind of like canning would? Never seen it done that way that’s pretty interesting

It was safe at the time it was originally canned, until that seal is broken there should be nothing else happening to make it unsafe. Some minor deteriorating, but if stored properly, we are talking centuries.

Conserving and canning season is upon us all. So far I've made various pickles, canned tomatoes, dried tomatoes, dried herbs, etc. I have 5.5 kg of tomatoes waiting for me to slice and dry. That amount will fit in two one liter jars. My family loves the tomato chips. Have you ever considered getting a canning funnel? You could forge one out of stainless steel after looking at a picture or three online. [Full disclosure, I bought mine from a hardware store - I cannot forge.]

So many good memories with my Grandma, picking and making her famous chunky applesauce. Seeing you and your kids doing it made my day...and mouth water. As the patriarch of our family, I'm still known as the Applesauce Kid. Perhaps one of those jars are destined for the US?? ;-P Loved the paraffin, Nice touch and very cool machine.
