Doria's bonuses only work when she wins the fight. So if you can kill an epic with her that's amazing but otherwise, she is not very useful.

You click on the building and there will be an icon that has an "i" on the right hand side, like for information, you click on it and then at the bottom of the screen you can hit the "x" for demolish.

How do you gain VP but not level up captains?

There is nothing good that I have found for not increasing your captains, but you can keep your hero low by keeping them out of the fight, which is a good thing. Thanks for watching.
