Having many French Canadians in my family, I can tell everyone that yes, this is amazing. Recommend you have it with mashed potatoes and steamed carrots.

Bravo !! I am French-Canadian and most people forget that true tourtiere has potatoes in it. We diced them up just like the onion and celery.

You add what you have available. Where I'm from Celery was not readily available some years, so celery salt was substituted. Further, some meats can become scarce or expensive, or you have to travel too far afield to make it practical, so the some use ground pork only instead of a mix of meats. I'm guessing the recipe I have is an old potato farmers version.

I grew up in Upper Michigan of French-Canadian ancestry. We had these pies every Christmas Eve. It sure brings back pleasant memories. I am going to give this recipe a try.

We had these every Christmas Eve at my Grammas in Michigan's Upper Penninsula. I've been in the south for 6 years now and missed it so much. I made it last year and it was sooo good!

My Mom used to make meat pies all the time. Ground beef, ground Pork, green onions mashed potatoes and your spices. Sooooo good! We are from New Brunswick 😋

I've had this meat pie every Thanksgiving and Christmas for as long as I can remember. Absolutely delicious! Just in case anyone is interested, look up Rhode Island Dynamite, it's a real recipe and will have you going back for seconds ten times. I really miss the foods of the north.

I’m so happy I found your channel. I’m not a bachelor but there’s just the two of us now. The kids are grown and in their own homes and neither of us eat a lot, but we love to cook and eat good food. It was difficult to adjust recipes to just a couple servings lol, I was so used to cooking large meals that I still catch myself making a lot of food! So, thank you.

Similar to the Cornish pastie, which is individual. I made a large pastie pie once, it turned out pretty good. Now I want to try this recipe.

My mother made this each holiday but her family never put potato in it and at the time of year it was made when my grandmother was young there wasn’t any celery onions yes. We eat ours with cranberry sauce and I do add potato and celery plus a good amount of clove

To season mine, I used a flour slury with 2 beef bullion cubes and an envelope of onion soup mix to create more of a gravy-like consistancy with a dash of thyme and just a touch of finely minced rosemary, and salt & pepper. The texture of the filling was perfect and held together firmly when sliced, served with some reserved gravy spooned over each portion. Hope this inspires more creative ideas in everyones kitchen. :)

@Tommy O In a small sauce pan over medium heat I started with a cup of water and added 2 tablespoons of flour, 2 beef bullion cubes, and a package of French's Onion Soup. Whisk to create a gravy-like consistancy. If it seems too thick, add more water a little at a time until it's the way you like it. My pie turned out moist but solid; and each slice held together picture perfect. Wish I could add the photos. My wife liked it so much, she had another slice (and so did I)! LOL.

Although I have no doubt your pie turned out well and was very tasty, the onion soup mix would compete with the gentile use of spice mixture. Your delicious pie would not be a true Tourtiere.

Our generations of French Canadian always used ground pork, onions, and mashed potatoes. The key ingredient is always with Bell seasoning a must.

Tried this. Love it. Definitely in my personal recipe book forever. Couple of things. Firming up the mixture with potato. I've used good-quality instant mash for years as a thickener in all sorts of pie and stew recipes - never fails imho. Second thing... Why half a large onion, rather than one small one? Just showing off? (Sorry, couldn't resist teasing.) Great recipe anyway.

Tourtiere , or as we pronounce it Tookay, is a French Canadian tradition and I am sure everyone has their own recipe. Ours is simple like this one but we use ground pork, cubed potatoes, diced onions and very simple seasoning (salt, pepper, dried onion flakes and poultry seasoning.). It has always been fun to share with new family members and guests who initially cringe at the idea of pork pie! Thanks for sharing, I’m making mine today.

This is very similar to the tourtiere we make at home. My wife is French Canadian and she pronounces it like you do. She likes it with maple syrup.

Help me understand ... please!! I lived in Valdor Quebec for some time as a young teen. When making this... they used a spice ( I think it's name started with an M)... every receipe I see... I do not find the spice!! Anyone know what it is?? The ones here are good... but I am sure if it had that spice in it.. you would see it's just fabulous

We always had tourtiere on Christmas Eve. My grandmother was French Canadian Nova Scotia area. She made her as with all pork and onions along with garlic. I like the idea of mixing the meat and the puff pastry because I'm not a big pie crust fan. I make pumpkin custard in a 9 by 13 pan so that I can avoid the crust. We always had hours with mustard on the side. I love my catch up but I have never tried it with this pie. A couple of years and my mother would get them at the bakery and they were full of mashed potatoes with some meat. For a long time that's what I thought tourtiere was! I would say to my mother that nannies didn't have any mashed potato in it and she would reply I know just eat your pie. But my nanny passed away when I was 10 years old and I learned a lot from her about cooking. She had no sense of smell so her taste was frigged up. She used a lot of mustard on her Foods even on her homemade plain donuts and I have to say that it is delicious! It is sort of like a corn dog a honey corn dog without the dog. Anywho I think that is how we came to have mustard on the side. Sorry for the long post! :-) I know I am also very late to the party.

i have just made this and ate it, it was very nice not the best in the world but very tasty,as im british i couldnt ruin it by putting ketchup on it, a pie has to have some nice ale gravy on it, i think next time il stick to a good old british steak and ale pie thanks for the idea though:)

No to the ketchup. We always had a side of baked white beans and some small dill pickles. I think ketchup would cover up the nice spice flavors in the meat.

+John Lain I only let it rest for about 10 minutes. That being said, this stuff is always best the day after (for breakfast) and slightly re-heated IMHO.

What is the "savoury" spice? I'm not sure if it is a combination of spices or a specific spice.

+PattiMelt OnRye Good question! Savoury is a dried herb, it has a fairly unique flavour and is popular in French dishes featuring pork. You can generally find it (dried) in most bulk spice stores.

This is so good. My parents will serve that next weekend. There will also be some kind of stew, if I can call it that way. That one contains the meat of pork legs, meetballs, and the gravy is made from the cooking juice of the legs with browned flour... It is fattening as hell, by it's so tasty. 🤣 It's cold in Quebec during the winter... we need the fat! 😂

The trick is to let the meat mixture cool before putting it in the crust. If you don't you'll have a soggy bottom.

+ruby slippers Sure, why not. This is a fairly traditional Tortiere, but it could easily be adapted in a number of ways!

I'm French Canadian, my mom and dad were both born in Canada. Never ad mushrooms to meat pie. If you want the real thing not saying that this isn't as it is very close to it, watch a Canadian woman make it that's the only way I could begin to make you understand. LOL

@@stevemadore1275 oh pls...relax a bit in life. U act likecthete is one way to do it. I'm born here too and have had it many different ways from many different regions of que. I've never had it with mushrooms...but so what. Ya its not traditional but why the hell not! ...SIGH

I know it's dated, but first time I've seen this video. Can't wait to make this pie! But, if I were to add mushrooms, I'd fry them first as they contain a lot of water which will make your filling sloppy instead of firm. Thank you for the great recipe.

I am from the North East of England...I grew up on a pie just like this one the only difference was Mum's homemade pastry.

I've made the filling then put inside egg roll wrappers. Nice appetizer for parties.

Good idea, thx... I will even try to hybridize the filling, using half touritiere filling and half Vietnamese "egg roll" (rouleaux imperiaux) filling, rolled in those egg roll wraps.... in case people don't know this, "Chinese" egg rolls and Vietnamese egg rolls are completely different.

Mine is a little different in that I boil two potatoes first, mash them and add that to the meat. Also I don't put celery in mine, and my spices are salt, pepper, savory and sage. It's delicious !!!
