Bravo !! I am French-Canadian and most people forget that true tourtiere has potatoes in it. We diced them up just like the onion and celery.

You add what you have available. Where I'm from Celery was not readily available some years, so celery salt was substituted. Further, some meats can become scarce or expensive, or you have to travel too far afield to make it practical, so the some use ground pork only instead of a mix of meats. I'm guessing the recipe I have is an old potato farmers version.

I’m so happy I found your channel. I’m not a bachelor but there’s just the two of us now. The kids are grown and in their own homes and neither of us eat a lot, but we love to cook and eat good food. My mother made this each holiday but her family never put potato in it and at the time of year it was made when my grandmother was young there wasn’t any celery onions yes. We eat ours with cranberry sauce and I do add potato and celery plus a good amount of clove

To season mine, I used a flour slury with 2 beef bullion cubes and an envelope of onion soup mix to create more of a gravy-like consistancy with a dash of thyme and just a touch of finely minced rosemary, and salt & pepper. The texture of the filling was perfect and held together firmly when sliced, served with some reserved gravy spooned over each portion. Hope this inspires more creative ideas in everyones kitchen. :)

@Tommy O In a small sauce pan over medium heat I started with a cup of water and added 2 tablespoons of flour, 2 beef bullion cubes, and a package of French's Onion Soup. Whisk to create a gravy-like consistancy. If it seems too thick, add more water a little at a time until it's the way you like it. My pie turned out moist but solid; and each slice held together picture perfect. Wish I could add the photos. My wife liked it so much, she had another slice (and so did I)! LOL.

Although I have no doubt your pie turned out well and was very tasty, the onion soup mix would compete with the gentile use of spice mixture. Your delicious pie would not be a true Tourtiere.

Our generations of French Canadian always used ground pork, onions, and mashed potatoes. The key ingredient is always with Bell seasoning a must.

Tried this. Love it. Definitely in my personal recipe book forever. Couple of things. Firming up the mixture with potato. I've used good-quality instant mash for years as a thickener in all sorts of pie and stew recipes - never fails imho. Second thing... Why half a large onion, rather than one small one? Just showing off? (Sorry, couldn't resist teasing.) Great recipe anyway.

Tourtiere , or as we pronounce it Tookay, is a French Canadian tradition and I am sure everyone has their own recipe. Ours is simple like this one but we use ground pork, cubed potatoes, diced onions and very simple seasoning (salt, pepper, dried onion flakes and poultry seasoning.). It has always been fun to share with new family members and guests who initially cringe at the idea of pork pie! Thanks for sharing, I’m making mine today.

We always had tourtiere on Christmas Eve. My grandmother was French Canadian Nova Scotia area. She made her as with all pork and onions along with garlic. I like the idea of mixing the meat and the puff pastry because I'm not a big pie crust fan. I make pumpkin custard in a 9 by 13 pan so that I can avoid the crust. We always had hours with mustard on the side. I love my catch up but I have never tried it with this pie. A couple of years and my mother would get them at the bakery and they were full of mashed potatoes with some meat. For a long time that's what I thought tourtiere was! I would say to my mother that nannies didn't have any mashed potato in it and she would reply I know just eat your pie. But my nanny passed away when I was 10 years old and I learned a lot from her about cooking. She had no sense of smell so her taste was frigged up. She used a lot of mustard on her Foods even on her homemade plain donuts and I have to say that it is delicious! It is sort of like a corn dog a honey corn dog without the dog. Anywho I think that is how we came to have mustard on the side. Sorry for the long post! :-) I know I am also very late to the party.

+PattiMelt OnRye Good question! Savoury is a dried herb, it has a fairly unique flavour and is popular in French dishes featuring pork. You can generally find it (dried) in most bulk spice stores.

This is so good. My parents will serve that next weekend. There will also be some kind of stew, if I can call it that way. That one contains the meat of pork legs, meetballs, and the gravy is made from the cooking juice of the legs with browned flour... It is fattening as hell, by it's so tasty. 🤣 It's cold in Quebec during the winter... we need the fat! 😂

The trick is to let the meat mixture cool before putting it in the crust. If you don't you'll have a soggy bottom.

Mine is a little different in that I boil two potatoes first, mash them and add that to the meat. Also I don't put celery in mine, and my spices are salt, pepper, savory and sage. It's delicious !!!
