To make the the drinks in the video:

1 oz fresh squeezed lime juice
1 tsp bar sugar
1/4 tsp frozen Florida grapefruit juice concentrate, undiluted
1/2 oz Maraschino liqueur
2 oz light Puerto Rican rum
--------------------------------------
Finger squeeze lime juice over 1 1/2 scoops shaved ice in container of electric drink mixer. Add remaining ingredients. Blend. Pour into chilled tiki stem champagne glass.

Ooo, a mug! Never had Vic’s Daiquiri, but it sounds close to a Hemingway Daiquiri. Knowing you, you’ll probably want to find a vintage recipe, but I like the one from Robert Hess’ Bartender Guide: 1 1/2 oz white rum 1/4 oz maraschino liqueur 1/2 oz grapefruit juice 3/4 oz simple syrup 3/4 oz lime juice

Thats what i thought too. Im not sure if its true but i have heard that the Hemingway had Maraschino as a total replacement for the sugar because he had developed diabetes.

My money would say the concentrate would totally change the flavor profile due to 1 concentrate is directed to making juice so is usually sweetened. And 2 being a concentrate it would hold much better to the dilution added by the shaved ice. Straight grapefruit juice would end up quite diluted with these ratios it seems. Loving these videos!!

Watched the video earlier, then headed out to find frozen grapefruit juice concentrate and was successful. It was from Minute Made but thought heck it. Also bought a fresh grapefruit for comparison. Didn't have the ingredients to make the drink but I did a side by side taste test of the fresh grapefruit juice vs. the concentrate. The concentrate was definitely sweeter, so I'm thinking it would help cut the bitterness in the drink. Also, the concentrate being cold and almost slushy like in consistancy might change the flavor profile a bit more as well in comparison to straight up room temperature fresh grapefruit juice. Loved the episode and the epic ending! Also have I been sleeping on you having a Patreon page?

Hey Spike, Trader Vic's is selling stemmed martini glasses now. $15 a pop. A brown ceramic totem-like stem somehow fused to a glass conical martini top. No sure I want a vintage Daquiri, judging by your reaction. Did you miss adding a syrup? I find Key Limes are 1'' in diameter, and it takes about 3 to get ''juice of one lime...'' Persian Limes are the big ones. Squeezing a Key Lime with your fingers is no big deal. The safeway wants 50 cents apiece for the Persians, but Keys are 10 cents each. They're also sweeter. But do have seeds. I found a house in the suburbs maybe 4 miles from my home, that had a cardboard box with free White grapefruit from their tree. I used them up with Canonical Donn Recipes. Last week I went cruisiing for more, but couldn't find the place. Stores only sell the Red Texas Grapefruit. Aloha. Brah.

Dude loved your facial expressions trying this drink, wife said the same thing as most others, the concentrate is always sweet and loaded with sugar. I also think using it would make it more slushy as well. Ask for hearing about your own tiki mug, please make enough for everyone! When we heard it we both said we need one of those! By the way, thank you for these videos, we have watched all of them and Friday nights is a highlight for us to have a few tiki drinks and watch your video!

This drink is also known as the Hemingway Special, and it is one of the few cocktails you’ll actually want to grab some Ocean Spray instead of fresh grapefruit. I’d give it another shot if I were you! It’s one of our favorites here at The Witches Cove.

I make a lot of daiquiris and settled on this formula. 1 ounce lemon juice, .75 ounce rich simple syrup and two ounces of rum. I prefer to use dark rum, in fact, today I used Hamilton 86. But I use other rums when I feel like it.

Hey Spike I don't normally comment that often, cause I have to whip out the laptop, so I apologize for the long one, there is a lot to cover. First regarding the Grapefruit concentrate issue, do you think Vic meant the undiluted concentrate or using the diluted one? Maybe I'm overthinking it. Your show with Ed Hamilton was awesome. Sorry you got so drunk, but I found me a nice bottle of Neisson and made the Ti Punch. It was really good. I'm learning so much from your show. Next, I love the slow mo stuff you're doing at the end of videos. This last one was awesome, with the Raider's theme. Lastly, RIP ceramic knife. You served your owner aweso...grea...goo...well...I mean fine.

I thought I was the only one who didn't like every cocktail they made themselves...Glad it isn't only me that thought that recipie sounded good but when I tried it...Not so much. Really appreciate the effort you put in. I do think that the grapefruit concentrate would change the flavor profile dramatically on this recipie however.

I am thinking that grapefruit concentrate is full of high fructose corn syrup or sugar, thus balancing out the tartness. Thoughts?

This is why some claim the daiquiri is the measure of a bartender. It is because limes are so fickle, selfish and temperamental. Big, small, bitter, bland, bold, hard as a rock or supple... they care not for standards. The "juice of one lime" is a personal challenge to me as a Grand Mixoid. Great show Spike, thanks.

Also- I find that frozen concentrates tend to be a little be sweeter, so that might help with all the "tangy-ness" of the drink.

I bet the concentrate is less tart and probably has sugar added to make it sweeter. This probably makes it more palatable. Just a guess.

The frozen Florida grapefruit juice concentrate would add flavor without adding extra liquid. According to the Googles, Minute Maid makes it.

I think the ratios are way off, maybe due to the concentrate thing as others have said. These are the same ingredients but this very tasty drink is called the Papa Doble: 2 oz white rum .75 grapefruit juice .25 maraschino 1 teaspoon sugar .5 oz of lime juice

Did you add the bar sugar? - and the grapefruit concentrate would have been very sweet as well - hence ‘wow is that tart’. Plus you added 2 limes - shoulda done one, the smaller limes are more tart. What you just made is actually a Hemingway Special- Love the show. Keep en coming!

Yes, I added two limes because the first lime was only something like 1/2oz of juice. If you pay close attention to Trader Vic's recipe books he calls for 'juice of one lime', the general consensus among the tiki community is that 'juice of one lime' equals 1 ounce of lime juice, however you get there (even if it takes two limes). I did add the bar sugar at the 4:00 mark.

The instructions for a can of frozen grapefruit juice concentrate is to mix it with 3 cans of water, so if the recipe calls for 1/4 tsp of concentrate, then the non-concentrate equivalent should be 1 tsp of grapefruit juice. Maybe the extra grapefruit juice would have balanced out the maraschino flavor?

i think it says concentrate, not fresh because the concentrate has .. concentrate of sugar and flavor.. before diluting in water. Safeway brand has pink grapfruit juice concentrate in frozen isle. google first before running around stores.
