A few little corrections here: No, this is not how you get the skin off when you use silverware - which traditionally isn't used at all. If you use silverware, you carefully cut through the sausage lengthwise (as shown) just down to the skin on the other side - leaving the skin on the other side intact. Then you can simply hold one half with the fork and push the other half off the skin with your knife. Reverse, hold now empty skin on the one side, push the other half off. Traditionally none of that is needed because you "zuzel" Weisswurst. Which means you take it in your hand, stick one end into your mouth and vigorously suck the meat out of the skin - with a little help from your teeth to separate and push "slices". Between "bites" you dip it in mustard.

Thanks for the details. I have seen in Bavaria tent the real Bavaria sucking the sausage like how you described it. Me and my German husband (not from Bavaria) haven't managed to learn it so far 🙃

Also ich kenne niemanden mehr der zuzelt. Dafür sind die Weisswürste inzwischen viel zu fest. Früher konnte man die frischgebrühten noch so essen aber wo kann man den heute noch rohe Weisswürste kaufen?
