Traditional Chocolate Slice Cake 古早味巧克力蛋糕

~ Baking tray 27x35 cm
🥣Ingredients
60g corn oil （玉米油）
60ml milk (牛奶）
20g caster sugar （细砂糖）
1/8 tsp salt（盐）
2 tbsp cocoa powder （可可粉）+ 3 tbsp hot water （热水）
100g plain flour（普通面粉）
10g corn flour （玉米粉）
4 egg yolks （蛋黄）
1 egg （全蛋）
Meringue: 4 egg whites （蛋白）, 80g caster sugar （细砂糖）, 1 tsp lemon juice
Topping: 50g chocolate rice （巧克力米）
Buttercream （牛油糖霜）:
200g butter（牛油）
60g icing sugar （糖粉）
1 tbsp condensed milk (炼奶)
1/4 tsp vanilla essence（香精）
Steps:
1. Mix oil, water, sugar and salt.
2. Dissolve cocoa powder in hot water & add into the mixture.
3. Sift in the flour + corn flour & mix well.
4. Add 4 egg yolks + 1 egg & mix well.
5. Meringue: Beat the egg whites till a bit bubbles, add 1 tsp lemon juice.Add the sugar slowly by 3 portions & beat till stiff peak.
6. Add the 1/3 portion of meringue into batter & mix well.
7. Pour the batter into the meringue and mix well.
8. Bake at 140°C for 20min, 160°C for 10min, 180°C for 10min
Buttercream:
1. Butter - soft & cold, but not melt. Beat the butter till pale white
2. Sift in icing sugar.
3. Add the vanilla essence & Mix well.
4. Beat till light & fluffy
Piping gel:
1 cup water
2 tbsp sugar
1 tbsp corn flour
Food colouring
- Mix water, sugar & corn flour and heat up.
- Stir continuously till thicken & add food colouring
