Traditional coffee almond slice cake 古早味咖啡蛋糕

~ Baking tray 27x35 cm
🥣Ingredients
60g corn oil （玉米油）
60ml milk （鲜奶）
20g caster sugar （细砂糖）
1/8 tsp salt（盐）
2 tsp instant coffee powder （即溶咖啡粉）+ 2 tsp hot water （热水）
100g plain flour（普通面粉）
10g corn flour （玉米粉）
4 egg yolks （蛋黄）
1 egg （全蛋）
Meringue: 4 egg whites （蛋白）, 80g caster sugar （细砂糖）, 5g corn flour 玉米淀粉
Topping: 100g Almond flakes （杏仁片）(or peanuts)
Coffee buttercream （咖啡牛油糖霜）:
200g butter（牛油）
80g icing sugar （糖粉）
1 tbsp condensed milk (炼奶)
1 tbsp instant coffee powder （即溶咖啡粉）+ 1 tbsp hot water （热水）
▼Steps:
1. Mix oil, water, sugar and salt.
2. Dissolve coffee powder in hot water & add into the mixture. Add the coffee essence & Mix well.
3. Sift in the flour + corn flour & mix well.
4. Add 4 egg yolks + 1 egg & mix well.
5. Meringue: Beat the egg whites till a bit bubbles, add 1 tsp lemon juice.Add the sugar slowly by 3 portions & beat till stiff peak.
6. Add the 1/3 portion of meringue into batter & mix well.
7. Pour the batter into the meringue and mix well.
8. Bake at 140°C for 20min, 160°C for 10min, 180°C for 10min.
Topping: Bake Almond flakes at 180°C for 10min.
▼Buttercream:
1. Butter - soft & cold, but not melt. Beat the butter till pale white
2. Sift in icing sugar.
3. Dissolve coffee powder in hot water & add into the mixture. Add the coffee essence & Mix well.
4. Beat till light & fluffy
