Het is niet een typisch NL versie ervan. Na generaties en ook na vele verschillen, ga je, je eigen versies ervan maken. Al is het niet origineel, het is wel prachtig om te zien dat er meer culturen zijn, die onze delen!

He talked about Hutspot and Stamppot, like those are 2 different things which is not. The dish is called Stamppot and you got many sorts of Stamppot: Hutspot is the carrots and onions kind of Stamppot. The kale one is called Boerenkool Stamppot. Another popular one with endive is called Andijvie Stamppot. Traditional Stamppot doesn't contain any apples. Also the sausage doesn't look like a Dutch smoked sausage (Rookworst) at all, it is shaped like the letter U and has a bright reddish/brown color like a hotdog. But I think you can only get that kind of sausage in The Netherlands, so that will be forgivable.

@The Godless I know :) as part Belgian and Flemish most of people don't want to say part of Dutch. Funny enough, Flemish culture is older than Dutch and the argument since the early 1800s, before Belgium became a country was. .if Flemish is a language or if it is part of the Dutch language. So there is a difference in the cultures. Southern parts of England had Flemish living there before the Middle Ages. One church, I forget where, and it was before 1200...had something written in Old Flemish. So it wasn't Dutch then; was Old Flemish. I Could go on and on as i love history :) been reading up on it. Turns out not many people know about Belgian history, especially with the Flemish.

The only version of "mashed potatoes with XX vegetable" (aka stamppot) that has apples is "hete bliksem" (hot lightening in english). A stamppot with kale or carrots would never traditionally have apples in it. Maybe this is something Mr Collins's grandmother would do, but it certainly isn't normal in the netherlands. And you would start mashing the ingredients after most of the water had boiled away/absorbed, not when the ingredients of the pot looked like a soup. The consistency of the completed dish accurately resembles mashed potatoes (and not too creamy) with bits of vegetable in.

I am Dutch, married to someone from Alabama. Since I am a chef, I tried to make traditional Dutch 'stampot zuurkool' in the US, for my inlaws, so mashed potatoes with sauerkraut, smoked pork-belly and smoked sausage. Sadly the American sauerkraut I managed to get was a lot less sour and the smoked belly not strong and salty enough. What I am try to say is: its hard to get the right ingredients also... O and b.t.w. , many restaurants I went to on Alabama used kale as a garnish and several in-laws insisted it was parsley.. Anyway, towards this video: the kale dish does normally not have apples, however some people do put fried onions trough it. This isn't a big deal though since Dutch people also experiment with their 'stampot' and regional differences are plentiful . One thing you do need to remember is to use a lot less water and (partially) drain the veggies! The 'soup' I expect this chef produced is not stampot...

I moved to the Netherlands in the 70s for 5 1/2 years (and once again in 1989 where I've been ever since) and one of the very first family meals I ever had was at a home with 7 children. They served up this huge pot of orange mashed potatoes (potatoes, carrots, onions and bacon bits), some cut up pieces of smoked sausage on top, then slathered it with brown, runny gravy. I've been a fan ever since of every kind of hutspot that there is. I never used to like sauerkraut until I learned to eat it like the Dutch. Mushed together as a stamppot. Heerlijk lekker!

Boerenkoolstamp or kale mash: The potatoes should be 3/4 underwater, fine cut kale on top (only soft leaf, remove hard center), steam will cook it, sausage on top of kale. sausage needs heat for 20 minutes. (Or use ready to eat sausage.) Lid on the pan. Reduce the heat but keep it softly boiling. Cut some smoked bacon in small pieces and fry it in a pan until little bit crispy. At the end, add some water and bind it with a little cornflower to get a sauce. You can use bouillon instead of water. After cooking for 20 minutes, take the sausage out, drain the pan (only a little bit of water will be drained), add salt and white pepper (relatively a lot), mash up. You can add some milk to make it less firm. It must stay firmer than mashed potatoes. Put the boerenkoolstamp (kale mash) on a plate, make a dip in it, fill that dip with the sauce. Add sliced sausage on the edge of the plate. Hutspot or carrot-onion mash: Replace the kale from above with cubed carrots, the big ones, not the little sweet ones, together with cut onions. In weight 50-50 %. Replace sausage with crispy big slice of bacon, or very long prepared beef that falls apart (like goulash).

mine immigrated to the US in the 1940's.. it was mostly deep fried smelt fish or cod and some variation of potatoes, pot pies, chowders and carrots.. perhaps because the Netherlands was under a different rule and time period

Before you start to cook this you fry some dices bacon on a low heat and let the fat bake out. When potatoes and carrots are done you drain the water first and have it drying a bit on low heat for a minute, than you mash it al together. When everything is mashed you add the fat and the bacon for more flavor. And lots of pepper on the hutspot (carrotmash). If you have some leftover gravy from yesterdays meat you can add a bit too. Or some slices of butter. This is real farmersfood, so everything which is nutricious can be used. Btw: have the same ladle and all forks, knives and spoons.

To be clear, just everything he prepared is not done by any Dutch and also not in the passed. Hutspot is one of the many stamppots and made with another type of bigger carrots called winter carottes. Stamppot Boerenkool is one of the stamppots. All the stamppots are drained and have the consistancy from mashed potatoes. Furthermore we do add spices like salt, pepper and nutmeg and also mustard is very common to eat with the smoked sausage. And a little bit vinegar is very common to add in the boerenkool as well.

It's almost like it's a recipe of one single family who moved to a new country where the ingredients were very different. For example, kale in the Netherlands is naturally more sweet due to frosting over which might not have happened to their kale, requiring apple. Adding fruits to stampot also isn't unusual if you actually ask around, my grandma used to add pineapple to some of them.

I will not even try it.,There is a stamppot recipe with the name " hete bliksem", that is potatoe mixed with apple only. Fresh boerenkool is also available" as summer boerenkool" but also nowadays in the warmer climate boerenkool mostly doesn't reach freezing temperature.

Raasdonders! Marrowfat peas with bacon-bits, apple and onion. You can finish it off with applesauce. I personally leave the onion out, I don't like it. But it tastes sweet and a bit salty and it's delicious. Marrowfat peas count as veggies. And it's just so good. (Edit: But they're called Raasdonders, because it means 'raging backsides.' It'll make you fart like a hurricane if you're sensitive to it. I don't have any problems when I leave the onion out though.)

Dont call it traditional recipes when you clearly have no understanding of the food you are cooking. There is no apple needed as carrots when coocked proparly are sweet enough on their own.Even the choice of meat is wrong , should be klapstuk (slow braced beef) the jus is an importand part of the dish . A tip , watch some instruction videos of how real hutspot or stampot is made.

Haha, poor guy. You use way more kale and butter and milk after draining any water you have left (which should be very little) so it's way more rich. Plus fried cubes of bacon often go in or on top, some people put gravy on it.

That's.......that's not how you make hutspot...... You boil the carrots and onions together, but the potatoes separately, and you DO NOT add apples. Adding apples makes it a completely different dish called "hete bliksem" ("hot lightning") When the carrot&onions and the potatoes are cooked you DRAIN both, but save the liquid from carrots&onions. Mash the potatoes first, then add the carrots&onions. Use the liquid you saved, in case the mash is a little too dry. Add pepper, salt and nutmeg to taste. The sausage used should be a smoked sausage, not a boiled one. As to ingredients, it should be 2/4 potatoes, 1/4 carrots and 1/4 onions Other options are to boil the potatoes in a light bouillon or broth and adding milk and/or butter, instead of the cooking liquid. The second recipe is called "boerenkool stamppot", not just "stamppot". "Stamppot" literally means "mashed dish", so you really need to add WHAT is added to the potatoes. The traditional options include kale, sauerkraut or endive. Instead of smoked sausage, finely chopped and fried pork belly is also traditional. Bacon can be used instead.

When you try to make a Dutch Recipe, the comment section: G E K O L O N I S E E R D And no that is not how you make Hutspot. Arbeit there are many variations of it but this is not one of them. I for instance like to fry my carrots and onions with a little bit of sambal. And mash those in with the mashed potatoes. Because lets be real here, fried onions taste way better than cooked ones. Also I just like a little more bite in it than the tasteless mashed stuff most Dutch people make. Haters gonna hate, ik ben Indo en zo maken wij het. I wouldn't like any apple in a stamppot or hutspot, but that's a matter of taste I guess. Personally I find it as disgusting as a pizza with pineapple. Instead put some little pieces of fried bacon in the kale stampot, that's so much better 😋 And please don't start mashing everything when the boiling water is still in the pan 😰 First drain the water.
