This is a very traditional pudding and what better to have on the Queen of England's Platinum Jubilee! We have even found some regal sounding music to accompany. It is sweet but so light that you'll definitely come back for seconds. It has a custard base with breadcrumbs for extra substance, a layer of fruit jam then topped with silky meringue. (Mine may have been slightly over-whipped but my cameraman wanted me to keep going to get the right shot!)
Ingredients

1pt (568ml) whole milk
50g butter
3 eggs (room temperature)
155g caster sugar
grated zest of 1 lemon (unwaxed if possible)
110g white breadcrumbs
3-4 tbsp fruit jam, I used raspberry
Oven preheated to 175c
Medium sized ovenproof dish
