The salt and minerals are these, you have lost due to the alcohol degradation over night by your body, this is the reason of the hangover, the lost minerals, With the Matjes, you are just filling up the lost minerals, fat by the fish and the butter, the carb from the roll. And regular with a hangover, also the taste is harmed. So a strong tast is needed to taste anything. Mineral water + Tomato juce + Matjes roll, just what the body needs. And it will also calm down the stomach (if it is a good Matjes and not a cheap one with too much salt).

Hackepeter (in our region we call it Thüringer Mett) contains 3 grams of pepper and 20 grams of salt per kg pork meat. But I always add a little freshly ground pepper on top. Onions are of course also a must. Fat content max. 35% (more likely 30% or 28%). “Schinkenmett” approx. 22%. Usually meat from the shoulder, but also upper leg or lower leg. “Schinkenmett” = leg. If you make it yourself, be careful. Use fresh meat, store in a cool place, and consume on the same day.

Well, Mettbrötchen has to be eaten on a very fresh crispy roll and well spiced with pepper and salt..on top red onions and a pickled cucumber to round it up. This one looks a. bit poor. I recommend eating a Leberkäse Roll. Very tasty backed meet, eaten with mustard or better with a fried egg on top. Greetings ✌️

@@dananna8614It is very special controlled meat. The pig was alive that same morning and the raw product is sold the same day and you are expected to eat it the same day. Special safety protocols are followed that are more comprehensive than with minced meat from the supermarket. That is why you can eat it even though it is raw pork. A delicacy like Texas Oyster, but very popular in Germany. And yes, it is safe to eat. As others have said, great with more butter, onions and pickles!

On The Mett must be Black Popperpowder on it too , so i know it ,lot Orion + Black Popper powder. For me Cherry Matjes is much better than the normal matjes, more softer/smoother Taste than the normal maties i think. (Cherry means of course the alcohol drink not the fruit, the matjes was pickeled in it ^^)

Matjes are particularly mild herrings that are processed before they reach sexual maturity and are matured in a brine using the fish's own enzymes in the traditional process. The original manufacturing process was developed in the Middle Ages as Hollandse maatjesharing or Hollandse Nieuwe in the Netherlands

I miss the remoulade on the schnitzel roll, then it is not so dry. The raw minced pork called Zwiebelmettbrötchen seems to be missing the pepper on the minced meat but onion is a must! The Matjesbrötchen is like in the Netherlands but the German roll is better.

May, June and July are matjes season. Only herring that are caught in spring and have not yet spawned have a fat content of at least 12 percent in the edible part and can therefore be processed into matjes (Mädchen = young girl = Matjes in dutch).

We have matjessill in Sweden but it tastes different, more spices. We eat herring in all of our holidays, it’s one of the most important things on the holiday table 😄

Mett/Hackepeter rolls are usually only available for breakfast in the morning, or sometimes in the evening in some pubs who offer them as snack to a beer. The schnitzel roll* would be perfect for lunch and the matjes roll is something for the afternoon. The herring is different depending on the manufacturer and they serve different tastes. Most matjes are not vermented, but rather just pickled in salt/vinegar/cold-cooked. The vermented version is more like the Scandinavian matjes, but you can almost only get it in northern Germany. I also recommend looking for a Strammer Max, which is a typical German evening meal. It is a slice of bread with slices of ham and a fried egg on top. The ham is usually divided into Black Forest or Westphalian/farmers ham. The Black Forest is heavily smoked and the Westphalian/farmers ham is only very lightly smoked or not smoked at all. The Westphalian ham is air dried and corresponds to the Italian Pharma or Spanish Iberico ham. * there is often remoulade in the Schnitzel roll

Hackepeter or Mett can be both made from grounded beef or pork, or in the "Halb und Halb" version a 50/50 mixture of both. A good Mett already comes spiced with salt and peper, and sometimes you can even find it with little bits of onions. I usually put it on a buttered breadroll and add a bit more of the spices and onions on top.

Mett is usually just pork, not beef or "halb und halb". Some maybe do it otherwise, but the traditional Mett is always just pork.

Mett or Hackepeter is basically raw pork meat produced under special hygienic laws in Germany. Its commonly seasoned only with some salt and pepper and you can put onions or a little parsley if you want. I would always suggest to buy fresh Mett from a butcher and buy fresh Brötchen at the bakery... put some butter on it and the Mett has to be at least a thumb thick ✌🏻

It’s a bit weird that the raw meat is pig, The Swedish Food Agency advises against eating that. Raw beef is ok but not pig.

@@dananna8614 I also agree it´s a bit weird ... when one is not used to it. But every peace of meet has to be controlled before it may be sold. Raw: I thinnk it´s about the same with fish. I ve learned that fish has to be heated .. but still we eat sushi. Hackepeter is mildly seasoned only. The fish in the sandwich is raw (too), but pickled.

Good morning, in our region we also eat a lot of Mettbrötchen, but we season it with extra salt and pepper before eating and add finely chopped onions on top, you can eat it for breakfast or at other times of the day, but you should really buy good quality Mett. We don't eat Matjesbrötchen as much here, but if we do eat them, it's actually more if we've had a bit too much the night before, because that way the body gets back the salts it lost through alcohol.... Schnitzel in a roll is also eaten here, but relatively rarely, I prefer to eat the schnitzel without a roll with a good sauce and chips or fried potatoes, and not for breakfast 🤷🏻♂️ I leave you with my best wishes

Normally you get the "Mettbrötchen" with salt and peper already mixed into the minced pork, or without, with or without onion rings or diced onions. It varies on the location. Matjes and Schnitzel are usually the same everywhere in Germany, sometime remoulde is added to the Schnitzel instead of butter

Recepies for Mett/ Hackepeter vary but main ingrediances are: meat, fat, onions, salt pepper from that you´re pretty free which other herbs and spices you add like mustard seeds, thymeric, basil, nutmeg etc and best place to buy is at a butcher or you make it yourself, it´s pretty simple.

For Fried Fish you should find a 'Nordsee', it's kind like a McDonalds for Fish-Fast-Food. And that dry Schnitzel Sandwich should have had also some kind of sauce. But that's the difference between a low quality Sandwich and a good one. Unfortunately you don't know the secret spots where to bye the good food though.

I prefer the rolls with warm Schnitzel and without vegetables, salad, egg. Many butchers do have a snack station with warm Schnitzel, warm Leberkäse, warm sausages or pork roast.

The Hackepeter is pork meat and sold to be eaten directly. You can´t take it long with you or buy in the morning for the lunch. The pork meat is always fresh produced out of very fresh meat. If the shop cant sell the Hackepeter Brötchen within a few hours they have to dispose them by law. Because the minced meat is always completely fresh, there are no problems with bacteria. In shops, the display area for it has also to be cooled. Usually the seller also offern extra salt and pepper, as a spreader on site or micro salt & pepper bags to take away. But as I said, it is to be consumed immediately or soon, because bacteria will also multiply with heating. The Mett meat is also available in supermarkets in airtight packaging so that you can make Mettt rolls at home. The meat is then packed airtight or in a protective gas, so it will last for up to a week. The producers’ production facility is then as clean and sterile as an operating room.

Fried Fish, try a big supermarket with a fish counter, they have also some buns with fish like Matjes, Bismark or fried fish, the fish stall on the market might have it too or you search for a "Nordsee". Nordsee has lost some quality the last years I think but it is a place where you know what you get. My favorite Brötchen.... you had them here. Matjes-, Mett or schnbitzel are also my favourites. Or some fance one witrh difdfrence cold cust and cheese you get in the bakeries or: tomato and mozarella, which mnight not be the most German meal.

A different name for Hackepeter- or Mettbrötchen is: Maurerfrühstück - brick layer's breakfast, stereotypically with the 1st beer of the day. But besides the cliché Mettbrötchen can be eaten all day long. Edit: Typically it contains just ground pork, raw onions and pepper and salt as you like it. Some people put parsley on top, but it's not necessary. And usuallly it's served with half a Brötchen (roll), not in between a sliced full one, like you had it.

This is not a real Mettbrötchen. Half a roll thick with butter, on top of which is thickly seasoned (pepper and salt) minced pork. On top of that is chopped raw onions. Your teeth must leave marks in the butter. You are not eating a sandwich either, these are rolls, round pieces or bread rolls.
