In the Caribbean yes it's known as split peas and in Trinidad, putting in the the blender like he does, the name of that is dhal. Its eaten with rice or roti (East Indian flat bread)

To be honest, this is one of the best things that I have ever made - beats hummus so much. Thank you!. Would you do an item for horta please? I made up spinach, radish leaves, dandelion leaves, and young dock leaves boiled, then dashed with Greek extra virgin olive oil (of course) and white wine vinegar. Is that right?

very much like humus, just tahini instead of onions and a carrot. i make smooth potato stock or eggplant dip like that too. the lemon cest is a really nice touch and definitely noticeable in taste.

Hey Akis, made this using NZ olive oil and it was divine! It made a debut at the family Sunday roast dinner table as an alternative to gravy. Yummy!!!!

Fava beans is not the same as Greek fava. Fava beans are called koukia in Greek. This recipe calls for yellow split peas.

i was confused at the beginning when you said fava this doesnt look like fava beans and at the 1:02 mark you said split peas which confirms you used split peas not fava beans which are bigger in size yes? 🤔♥️

Fava is a cooking procedure, not a name of a product. In Greece fava equals lathouri beans boiled until looking like hummus. No carrots, potatoes,other types of beans, onions etc are added while cooking standard "fava" the one, people eat in Hellas. It is almost always served with onion slices on the side and olive oil that is added accordingly by those who are eating "fava". Some add a lot, some not at all.. It depends

Thanks for uploading! quick question - you mention to save the first batch of water for later (the water that rinsed the fava beans) but you don't mention putting them back. am I missing something? Thanks!

perhaps smaller yellow split peas. For example there are small lentils, medium lentils, large lentils. perhaps there is the same with yellow split peas.

Don't use one, it'll still be good. Stock or cubes are a bonus, they're not something you can't live without.

That's the point. Since he's in Greece and all ingredients are Greek, he could just say "olive oil" and we'd all assume that it's Greek. But when he mentions all the time "Greek olive oil", it sounds like he's trying to show Greek supremacy toward other countries'.

Farrah Muhammad In answer to your question, there are many answers! 1) Greeks serve it as an appetizer on the table along with tzatziki, olives (Kalamata olives of course), capers, a spicy cheese dip called "tyrokafteri", tangy octopus vinaigrette Russian salad and many more. 2) You can serve it as a dip for veggies or on top of toasted bread. Greeks love fava and it is a go to meal especially during fasting days with some green onions sprinkled on top and definitely capers if you like them. However, its consistency is really not "soupy ." I hope this was helpful.

It can serve as an appetizer, a dip or even a proper meal. I've even used it as a type of dressing for lettuce salad.

sorry but adding the lemon zest is a very bad idea. I followed the recipe but was able to throw everything in the trash because the lemon zest is way too strong. lemon juice no problem but the zest should be avoided.

I think in the ancient days Greeks did some washing or rubbing with olive oil! But now we make soap from olive oil!

those are yellow lentils..favs beans are big and look totally different...in USA those are lentils....do you call the dish fava or do you call the dried Beans/lentil Fava?

+Stacy Fletcher The word fava is a borrowed word in English. In Greece, both the dish and the dried legume (is it a legume?) is called fava. The word borrowed into English is from Latin and describes what you're talking about.

Yes, because it's the best! I started out with Spanish olive oil when I was young and dumb. Many of the oils are the worst of the worst. Then for a while ended up with a couple of italian olive oils, which generally are better than Spanish. And eventually when going to Greece for about 10+ times about now, I absolutely agree that in general for the best taste Greek olive oils are of superior quality. This is aside from the fact that Spain prodocues 30% of extra virgin olive oil, Italy 50% and Greece 85-90%.

Most Italian and Spanish olive oil makers buy Greek olive oil in bulk to blend it with their own, as the soil there has greater acidity etc and that affects the taste of the final product.

Nope. This is not a traditional recipe. I have never seen anyone mixing fava with carrots, onions etc. I've lived in Evros, Ionian, Dodecanese, Thessaly and Crete for more thzn half a century. Fava is boiled fava "peas" and many add fresh onions in while served. "Traditional" should be a way to show respect not views revenue.

The dish is called Greek Fava, its made with yellow split peas, not with fava beans.

You put boiling water over the split peas and rinsed it, it is not vegetable stock, it is dirty waterת Unless you also prepared vegetable stock separately which is not shown or mentioned in the video - in which case , how much vegetable stock?

@Munira With the exchange of Culture (from cuisine to language) all these thousands of years in the region of Eastern Mediterranean, it is normal to find similarities between arabic and greek cuisine. But "fava" is actually Ancient Greek dish, under the name "etnos" (έτνος). According to Mythology, it was the favourite dish of Hercules. Even Aristophanes (in his work "The Frogs") mentions the preference of Hercules for this one.
