PICKLED VEGETABLES are a big part of EASTERN EUROPEAN culinary culture and represent an efficient way of storing VEGETABLES through fermentation during WINTER TIME. GRANDMA has developed her own RECIPE over the past decades in order to achieve the best balance between sourness and saltines.
If you want to make your own PICKLES, you will need the following INGREDIENTS.
For the BRINE:
Water
Pickling Salt
Dill
Thyme
Allspice
Peppercorns
Cloves (if you're making SAUERKRAUT)
Sour cherry twigs (if you're making cucumbers or melons)
VEGETABLES of your choice, we used:
WHITE and RED CABBAGE
GREEN and RED TOMATOES
CUCUMBERS
MELONS
CAULIFLOWER
CARROTS
Greens and spices for each JAR:
Garlic
Chili peppers
Horse radish
Celery leaves
Sour cherry twigs
Bay leaves
Pickling salt
Peppercorns
Allspice
