Two notes to add: the dark kernel corn (dark blue and red) have higher protein percentages than the light color corn (3x to 5x). Use the Nixtamalization process to unlock niacin and other key survival vitamins. This is done by boiling kernels with hardwood ash/baking soda/CAL/pickling lime (1tblsp for 2 cups kernels) look for striking color change, rinse well, rub off kernel husks, rinse, boil like beans until soft. Eat as 'hominy' or wet grind for tortillas, or dry to grind for flour. Eating only corn (survival situations) and not doing this cooking process can give Pallegra disease.

Do people not eat corn smut in Kenya? We love it here! I don't know what nutritional value is though, and I don't think it stores as well as the grain. Thank you for the video

I have never seen or heard of a community that uses it as food in Kenya. It is still considered a crop disease.
