These koeksisters are sooo good, the perfect snack for any time of the day!
If you also want to make these, I used the recipe below.
Should get about 30 koeksisters.
Koeksisters:
Syrup:
Ingredients:
625 ml sugar
250 ml water
6ml lemon juice ( I only used half the lemon juice, since im adding in lemon peel)
peel of 1 small lemon(I added this in but it is completely optional)
1 Tbsp roughly chopped fresh ginger(I added this in but it is completely optional)
5 ml vanilla essence
Directions.
In a pot over medium heat add in the water, sugar, lemon and ginger and bring to the boil,
Dissolve the sugar and boil for 7-8 minutes.
Remove from the heat.
Add in the lemon juice and the vanilla essence.
Remove the lemon peel and the ginger and place in the fridge until extremely cold.
Dough:
Ingredients:
375 ml flour
22 ml baking powder
pinch of salt
20 g butter
150 ml milk
oil to fry
Directions:
Mix the flour, baking powder and salt together.
Add in the butter and mix until the mixture resembles bread crumbs.
Add in the milk in 2 batches.
Roll the dough out and cut into long strips.
Cut those strips into segments which contains three separate strands inside.
Braid the strands and place on a baking tray.
Place in the fridge for 30 minutes.
Fry the dough until golden brown.
Immediately add the hot dough into the cold syrup.
Allow to cool.
Enjoy!

When my dad was transfered to Pretoria, At my work I would have for lunch a koeksister and a coke for lunch.. Those were the days as I was only 43kg.. No more koeksisters for me now.. Enjoyed watching you.. Australia

This looks so good and I’m really keen to try, but a little concerned that you said @3.14 “add 500ml of vanilla essence” 😂 Assuming you meant 5ml.

It is 5 ml , you can also leave out the vanilla because the ginger and lemon give it the distinct taste of koeksisters

Thanks for the share. I will give it a try here in the UK. 2 questions: how hot must the oil be and how long do you dunk the sister in the syrup?

I usually have the oil temperature at about 170 degrees Celsius but I also just place a piece of dough into the oil and if it starts to bubble immediately, I know the oil is ready. I fry the koeksisters for about a minute to 2 minutes but most of the time I fry them until they are golden brown, then immediately dunk then into the ice cold syrup. hope you enjoy!

The longer you leave the sister in the syrup the more it will absorb the syrup . Usually 5 to 10 seconds is enough

Thanks Anya - i tried this today for the first time and it all started so well - smelt good, looked good. But when i tried them they were dry/hard in the middle, not moist and syrupy. - How long should they be kept in the syrup for after frying? the syrup was really cold and quite thick - is that how it should be? Any idea on why it turned out dry?

Take them directly from the oil to the syrup and don't let it get any air while in the syrup. Dunk them till they are drenched in the syrup.

All the recipes I've seen you leave it to sit in the syrup for a couple of minutes. If they are done correctly, at the end they should crunch when broken and be full of syrup on the inside.

Just want to know if you are following a different receipe as per the receipe it refers to a warm sugar syrup and not cold like other receipes. The hot syrup is working supet easy with same results

It should be hard once completed.you can keep it in the fridge for several dayIf you want it to soften up you can put it in the freezer overnight, remove and leave a while at room temperature it will be softer

Perhaps you cooked the sauce too long (as stove top temperatures are different) or added too much sugar. Please make the sauce again, hopefully it has the right consistency this time - goodluck!

You cooked it too long. If the syrup gets to about 175c, it turns to glass when it cools. add some flavouring and colour and you have some nice rock candy.

I did it 4 times and it came out perfect..but now that I decided to make them and sell them..my koeksisters are coming out crispy hard....what could be the reason..or better yet what am I doing wrong Please help Anya

That has also happened to me a couple of times and some things i did to prevent my koeksisters from coming out hard, 1) to not overwork the dough, if the dough is overworked it with be dense and hard. 2) dip the hot koeksisters into ice hold syrup, I leave my syrup overnight in the fridge since the syrup has to be very cold, in order for the hot koeksisters to suck up all the syrup and to keep the inside moist and the outside crispy. I hope this helps, please let me know how it turns out.

The sugar syrup recipe in the book (2:10) and your syrup recipe are completely different.

In the video, it is explained that only half the amount of lemon juice is used as the syrup was boiled with lemon peel in it. So the amount of juice is reduced to prevent it being too lemony.

I tried this recipe. Sorry to say, by using ice cold syrup was not a good idea, as most of my koeksieters broke. I think you guys should go back to the drawing board concerning the syrup...

thank you for watching the video, Sorry to hear that, the goal with the cold syrup is for it to be quickly soaked in by the hot fried dough. a great hack that i use is to use a fork instead of tongs, when dunking the dough into the cold syrup, if you make koeksisters again, give it a try.

Afrikaans is a mix of English and Afrikaans after the Dutch and British colonized South Africa we where forced to speak a foreign language and so Afrikaans came a mixture of both English and Dutch so it speraded to Namibia as well so it originally started in South Africa not in Netherlands

It is "Afrikaans" not a Dutch language. Derived from several European languages but also some words from the the slaves from Malaysia that was brought in by the "Hollandse Oos Indiese Kompanje" Namibia was for the most part called Suid Wes Afrika and was under the Protection of South Africa, the country later became independent. Many Afrikaans speaking people still have farms and businesses in Namibia and other Afrikaans speaking people live there permanently. In the 1970's and 1080's there was a border war in the north of SWA and SADF troops protected the border
