I once went to a restaurant that let my steak rest for 40 minutes along with the baked potato and creamed spinach.

I understand the need to allow a steak or any grilled/smoked meat to rest, but I hate cold or cool steak.

resting steaks has been proven over and over again to not only not do anything, but basically ensure you eat a cold steak. the steak that rested for 10 minutes is super banded and half of that steak isn't done to the desired doneness. the time it takes to plate and serve your steak is more than enough resting time. read/watch anything from Meathead and/or Chris Young and this is explained and proven, in detail.

Thanks for the video! I noticed that you let the steak rest on a grill, whereas I let my steaks rest on a plate in an oven heated to about 70-80 degrees Celsius. The result is that juices flow onto the plate which we mop up with some good bread as sort of an introduction to the meal and to savor the first sips of red wine we are about to have with the steak.

But, don't the juices leave the steak as it's resting anyway? How do we know that the juices that came out of the unrested steak wouldn't have left the steak anyway if it was rested? I think that you can see some liquid on the tray under where the steaks used to be at 1:32.

A very small amount is able to escape while resting, yes but not the degree you see when it's cut hot

Yes, they do. If you actually measure the weight difference between the methods it's negligible.

Lol all these people saying that the steak will get cold. Ever heard of a hot plate??? It's what restaurants do to their steaks all the time.

At that point you're kind of defeating the purpose of pulling it off early. That being said, it's actually completely unnecessary to let it sit.

No, just dry brine in the fridge and sear it hot 450+

If you rest it on a counter, a piping hot steak fresh off the grill will become cold just after 10 minutes. You can rest it in the microwave or oven or even throw a lid over top of it, and it will help. Anywhere you can put it where it is warmer but not hot enough to keep cooking the meat.

Great news for everyone, this is a total myth! It makes absolutely no difference if you rest your steak or not. Actually you are better off eating the steak right away because those juices that will come out of the steak either way will at least end up on your plate where you can mop them up with your steak. I can’t blame this guy. This is a myth most everyone I’ve ever know has believed.

I like people that find solution to the problem they created 😂 Why do they cut the meat? Why can't the person eating cut his own meat? If you don't cut it, the juice will stay inside and then you have the happiness to enjoy your meat hot. If you like it rose, then cook it until that point and eat it. If you like it rare, then if you let it rest it still cooking then it rose and cold. If you want to rest it while having it rare, the meat will be so lightly cook that it will just be totally cold. For me the best way is to eat the meat right in the pan, cut the part you want to eat, slide it in the juice and eat it hot. Easy

Why would the juices be wasted? Cut the steak on the your own plate and mob up the juices.

Pretty sure its something to do with the actual meat itself not being able to reabsorb the moisture so even if you "mob up the juices", the meat isn't able to retain it whereas with the rested steak, the juice is locked inside of the meat itself.

He said the outside of the steak that was cut instantly was overcooked... so if he is correct, resting the steak will allow the outside of the steak to time travel back to not being overcooked

I dont understand thisresting and juices, i mean i get my steak nice and hot and eat it, and the juices that flow in my plate i usually scrab them with a piece of meat or bread and enjoy them. I just cannot foce myself to wait 8 mins when the smell of barbequed stake is under my nose :)

After 8 years of "let it rest" i stopped doing it, its a bunch of bs. Just cause juices came out does not mean its not juicy anymore, you cant even tell the difference and its not like the juices just disappear, ITS RIGHT THERE ON YOUR BOARD, just pour it over tge meat.

This is nonsense. The actual difference in the amount of moisture lost between the methods is negligible and you actually risk drying out your meat by overcooking it if you let it sit longer.

You aren't going to dry out medium rare if it's cooked under. It should rest to reach medium rare.

@@AmandineClaireDubois that's true, but you're still inevitably drying out the meat more the longer it stays at a higher temp whether it's over direct heat or sitting on the counter.
