Well in the UK they are pronounced without the "E" Scon like Ron, we use a 3" round steel cutter we brush cream on the stop to eliminate the crumbly top, and we top the a very light dusting of confectioners sugar

I have been FD for sometime - just a suggestion...when FD something that has been frozen start your machine probably 1/2 hour before loading the trays. That way, your eggs won't defrost.

The new software update has us pre-cool the machine for 15 minutes for everything now., pre-frozen or not. It works great that way.

SAVE ALL YOUR EGG SHELLS. Make calcium powder with them great for your garden. let them dry for a few days, or dry in oven on 250° for 20 minutes. Then put them into your blender and turn egg powder.

I’ve watched all the videos in here so far and they are terrific! I just checked on my Freeze dryer and it looks like it will arrive in 3 weeks. I’m tired of waiting, but I still have a lot of food storage organization left to do. I think I’ve used every bit of space in our house to it’s max. It’s been very challenging, indeed!

I want to be able to freeze dry so badly, sigh.... Pam, I wanted to remind you that not everyone will have a Vitmix blender and that two good pulses on it will not be the same as a regular blender, therefore it might be necessary for someone to blend a tiny bit more than you did. I LOVE my Vitamix, even though it's an older one it is fantastic. I recently added the grain mill canister and wow! I bet that's the canister you need for those eggs, but as dry as they were it's just as easy to crush inside the bag. Good thinkin'! I have to say that those scones looked amazing,. I used to make scones from scratch, rolling/patting the dough and cutting them for tea parties that I did as a little business. Really makes me wish I'd had this version and that pan. Thank you and Jim so much for all the experimenting you do to bring us these terrific ideas and recipes!

I've gone back and binge watched all you have on freeze drying... got corn ans green beans going tonight, will most likely have cream and yogurt and maybe buttermilk and homemade cheese... I wish freeze dried eggs weren't so horribly expensive! At my age it wouldn’t be a smart decision to buy a freeze dryer, but if I was a lot younger, I would. Maybe I will try some in my dehydrator, thanks to your saying it is alright to do so. As we begin spending a great deal of time in our camper, they would be a tremendous advantage! I eat fresh cooked eggs, but my spouse won’t touch them, so I don’t keep a whole lot on hand. I am glad to know the powdered measurement that equals a fresh egg, so thanks again for that! I’ve never had a scone. I have to try that, too.

The rolling pin works much better. Only put one try of Freeze dried eggs into the gallon Ziploc bag. Remove all the air. Then you use your rolling pin. You will get a fine powder. I have been doing it this way for the past year. You will get more into each half gallon jar.

@@fourdayhomestead2839 I get 18 eggs on one tray. I have a medium FD. I sometimes put the egg powder in a sieve, to remove the larger pieces, to reprocess in my mixer. I have found on occasion that these larger pieces don’t fully rehydrate.

Great video as always. I'm making progress on building my pantry of freeze dried items in sealed ball jars. I noticed that you secure your jars on the shelf with an orange net of some sort. We did show that orange barrier on one of our RoseRed videos. We buy it at Home Depot--it is what some people call a snow fence and we just cut it to size and wrap it around our shelves for earthquake safety.

We set up our trailer or our tent at a "home base" for several days and then ride out daily on day trips on our 4-wheelers following different trails. Those day trips last anywhere from 2 hours to most of the day. Hope that answers your question.

I love to freeze dry eggs. my daughter has her own eggs, and I do those. some are very large, some are small I usually use about 20 or 21 per tray. she collects about 20 a day.

I would never been able to eat dehydrated or freeze-dried raw eggs until I saw you okay with it. I trust your opinion on the safety of it. I don't dehydrate them, but I am buying freeze dried eggs now and it will be great to have that in the pantry. I love scones too so that will be something I just have to make! Thank you!

Pam, you did a video on dehydrating eggs but many people say it isn’t safe. We don’t have a FD (frankly we are afraid we will buy it and by the time it arrives, there will be no food to dry)… but what is your official stance on dehydrating eggs. Ours come from our own chickens so I tend toward storing this way… thanks for your hard work!!

It can be tricky to dehydrate eggs but I have done it and the eggs have been just fine. You need to control the temperature, which is the tricky part, and try to keep it under 140°F so you don't "cook" them. Nobody ever talks about the cleanup of Calvin. When freeze drying do you ever get a problem with it taking on odors of the things that you’re doing. Or does the machine ever get dirty inside and how do you clean it

We have done a video on that on our other channel. Yes, I have had to clean it. You can pull out the shelving unit and disconnect the cable. I use mild dish soap and warm water and wipe everything down. Don't use bleach! I wipe the shelves and inside the chamber. Then I do the same thing with clean water and then use a dishtowel to dry everything off and put it all back together. Between batches I leave the door open so it can air out--especially after doing onions or other smelly stuff!

I only know about the Harvest Right freeze dryers, so if it is the small model of that brand, then I would say it is safe to use.

Commercial ones say 10 years on the back of their cans. I would say that ours will last at least 5 years because I am quite conservative about home-processed eggs. We rotate through a 2 quart jar of ours in about 2 months and I keep a minimum of a 2-year supply of them in our food storage. I don't want to be without eggs and we no longer have chickens.

Oh no, no, no - let's help each other here - grab some "barbie tables" - pizza box white separators - you put 4 or 5 in the tray - I wash them in the dishwasher in between batches - use your wonderful little white squeezy measurers to pour into trays if it gets harder to reach and not spill, but I have a tupperware container of those cheap little tables and use them in the corners and in the middle, pour into the tray in the freezer and stack the next one - helps you to get LOTS of trays in that shelf - and I now make whites and yolks every once in a while - I use the whites for angel food cake and the yolks for noodles. I don't do as many and the yolks are very plastic like - I have a LOT of chickens.

@@trailgrazers3690 Making it easy and very inexpensive to stack trays in the freezer - we have 8 trays and are constantly filling them, getting them ready for the freezer - this makes it so very easy. If it's liquid, you put the pizza tables down first and then pour in your liquid - using your nice squeezable measuring cups - put another tray on and add more pizza tables - Or you just put the food in the tray and then put the tables in and freeze. It makes it easy to stack 4 trays to a stack and then, for us, 3 rows of trays on each shelf. Then we start with the small 1/2 trays for a toaster oven to get more started for the medium freeze dryer we have. Hope that helps and sorry it was confusing!

Loved this one! My first day using my freeze dryer will be tomorrow and eggs will be a perfect start batch as I have eggs coming out my ears right now. How strongly do you recommend freezing them first? Excited to get started and freezing first will set me back a bit but if I need to freeze I will.

Lori, you don’t have to freeze them first. I put my trays in the freeze dryer first. I scramble 18 eggs in a bowl with a spout, than pour the eggs into the trays. I turn on the freeze dryer just before you scramble the last 18 eggs. This way all you will have to is start the freeze drying process. I have a medium size FD with 4 shelves. Get a second set of trays. Have fun with your new FD.

We did 4 trays of buttermilk this week without freezing them first and they blew up inside the freeze dryer. I won't do that again! I am OK with not pre-freezing things like stew and fruits and veggies, but for me, pre-freezing trays of liquid food is a must.

I did reconstitute a 1/2 gallon though and it separates really quick. It was raw goats milk, perhaps that is why? I don’t know but it tasted great!
