Time-lapse: I'm OK with them if they're reasonably short and I can see and understand what's being done, which usually means there's some annotation or commentary around the speedbuild section which explain what is/was being done so that it fits neatly into the narrative of the video. I do like the look of those German buildings, will have to hunt them down! As for the 'Scottish station buildings' I've used, I think they're most likely from the "Kilbride line rail station modules" (madhatter) or, possibly, "Wool Train station" (JamesT85Gaming). Oh, love the detailing, it does really enhance the cab-rides as well as making the map look that much more 'real'.

CG, timelapses are fine, but maybe a mix of lets play and timelapse would work?

Don't mind time-lapses too much but I do prefer them when they have commentary over them rather than music

Time-lapse is OK for detailing but prefer to hear commentary describing what you are trying to achieve when doing trackwork and stations.
