So good Jennifer, yeah the big-sky country of Tak, I havent been to Montana but I just kept thinking "Hmm is this the Asian version of Montana?" It was like this almost every day. Pouring rain ALMOST the entire day, except for incredible and amazing gaps where the sun shone through so brightly! Lucky enough, this one turned out to be happening right when I was rolling away from that amazing restaurant... so I hurried to get out of town where I could see things a little better. Hi Joel, I’m Burmese. Happy to see you enjoy our national dish mohinga. Mohinga is made from catfish, Chana Dal, roasted ground rice, lemongrass etc. Also we garnish it with yu tiao, boiled duck egg and chana Dal fritter (not corn), fishcake, coriander, lime and chili flakes.

When Asian people laugh at you, I think most of the time it's a compliment. They appreciate the fact that the "Farang" puts an effort to try to speak the language, even though the accent usually off the mark by...oh...I don't know, a mile? I can't speak for ALL Asian people, but I know my family and I always laugh "at" Ms. Rose, a lady who is taking care of my mother. Every time Ms. Rose attempts to speak Thai, my bedridden mother (due to a massive stroke), just burst out laughing. Mom finds Ms. Rose's effort to be...endearing, and Ms. Rose finds it hilarious herself, for making my mother laugh. Joel has nearly mastered Thai Language here. His accent & effort is quite impressive. Blessings to you as well, Alexandra (one of my favorite Christian names, btw), and to Joel, Li, and all his subscribers. Stay safe!

Joel, you're absolutely right. So many interpret unplanned events like rain as a problem when it could simply be the universe turning the page for you. You see that. I'm glad you were so open to this event and just letting things shape around you. I no longer let these "rain" moments change me, I actually look forward to what might happen afterwards that might not have otherwise occurred if not for the "rain". Love these vids! Ok well, about the food, I can tell you honestly that when I get to make videos with Mark, we eat two to three TIMES more food than this (and we always finish everything we order!). Its how our moms raised us, but also, its a big way to respect those who are welcoming us/cooking for us, so we are happy to do it! Obviously I like to eat, but so do many people... I guess finally I could say that God blesses us in the ways that we find ourselves skilful, giving us life experiences that match with the gifts He has given us!

Hope you enjoy the learning process Dana!! They look fairly simple, but oh wow they are SO tasty :). I wasnt able to find a recipe for the shrimp soup (or I would have shared it!) but try to find something very peppery (maybe a mix of black and dry red pepper), taste of slightly sour, slightly salty, and slightly stinky as well, and get that to go with the corn fritters.

Super heavy rain morning through to afernoon, and then unbelievably beautiful skies from around 530-630pm. Such an obvious symbol that God is watching over us right? So good always seeing you commenting, sending me such positive words, AND I always see that you really are interested in the details of the foods. Not just looking, but actually thinking about it... so cooool! Yeah there were at least 2 things on this table I have never had before! LOVE when that is possible, even after 11 years here, which is a huge reason why I still am in love with this place... this entire part of the world, so mind-bogglingly diverse... 111 years and I am absolutely certain I would still be finding new things each week.

Thank you for taking the time to write (you know what, I forgot to include a clip of those 2 little boys!! you mentioned it, so I will tell you they ate the chicken, they ate the rice, they drank the water I got them, but they REALLY liked their ice cream. Haha, kids everywhere are definitely united in that somehow they know what to eat to stay healthy, and what to go for to stay happy!! hahah :) it was cool to sit with them for a few minutes on the street corner, trying to cheer them up a bit with my funny dressing style at least :) )

Great journey Joel!!! It's been more than a week since I checked your videos due to a suddenly busy schedule. The corn fritters looks like a comfort appetizer during the rainy day with that soup-like sauce. It looks deep-fried and more 'pulpy' than the one we have here in Java, though. Here the corn would be mashed into wet dough consistency while some pulps stay whole and fried together. But not as crispy as the one you have there. The noodles seems great too. I never had Burmese dishes but it seems like the Burmese like spicy and peppery food too. Thank you for the amazing experience! :D

Haven't spoken in a while, brother Joel. But I'm so sick of the food here in America (and the service). I am trying to lose weight, and so much here is just unnatural. I gained weight when I got Gout, and couldn't move much for a year. Changed my diet, but now I have pre-diabetes. And I have to find a way to change it again, and it hits hard in the bank account. It's so frustrating. I'm getting to the point where I can exercise more, but walking is still hard, but can't afford a bike. Anyway...enough of my woes. I'm glad to be able to speak again (send you a message). Hope to see you in the future, bro. Be safe and keep the videos coming. You're truly an inspiration!!!! Blessings!!!

Daniel! Oh man, I am reading your message and sending up some prayers man, this is a really, really testing situation you are living in right now. Living through!! I am lucky to still have you coming back here, to watch, and to write me, lucky to have you supporting me! I did not study nutrition, but I read a LOT (and I mean books and research journals, not just searching 'Google' for dietary advice), and I also just use myself as a long-term and occasionally rigorous experiment... so I have learned a little over all these years so far - and if there's any specific questions you have, please ask. I am sure I could learn from you as well, and I would be so happy if there's anything Ive learned that could help you as well (you mentioned it being expensive to eat healthy, I have specifically made myself lists of ways to be 'healthy on a budget,' maybe some of these would be useful to you (you mentioned a few other restrictions, so you would have to let me know so that I can make recommendations that are actually useful to YOU, not just 'useful in general.') I find myself falling in love with Joel, not in the THOU SHALL NOT... kind of love. I think it's his genuine openness, optimism, and appreciation to everything and everyone he meets, make me "love" who he is. At first glance at his clip, I found him to be rather boring ( I have ADD), but once I calm down and just watch, his clips are actually enjoyable, entertaining, and informative. Glad you've tried the taste of Myanmar "Mohingha". It's actually not vegetarian unless it's prepared differently in Mae Sot. It's made with fish meat stock, lemon grace, rice, and bean flour, ground pepper, garlic, onions, chili powder, and fish sauce. My hats off to you Joel!
