The snacks donation you saw is blessed with prayers. It become sacred and holy so Tibetan people gather there to take it and share among love ones. I work in office and unable to go to temple during prayer time and my neighbour would bring it and share it with us.

And also dough thing he pointed in small kitchen called Torma which has created in different shapes and forms for different occasions depending on what types of prayers goes in. Those Torma are offering to Protectors during praying to take away obstacles and later they throw out and most of the time, birds eat them. It's made out of tsempa and butter.

Good to see your family in Dharamsala. It’s always good to ask local people about what’s going on around and little bit about their tradition. You guys are very curious to get blessing from Dalai Lama. You can go to his private office next to this temple to see if you can get a private audience with him. These days Looks like His Holiness the Dalai Lama give audience to people. Good luck and have a nice and safe Journey.

The Tibetan room that you entered around 12 minutes, was of Guru Rinpoche a.k.a Padmasambhava. Google the name to know more details because I too don't know much about him.
