I think it mainly stems from the human love for characters to become more than what they are. So if you establish a character as arrogant, selfish, hedonistic, disrespectful, etc, you establish (at least at first) how you can expect they will act in any situation. A character who is an "alpha male" douchebro like Chetney, you can expect to be an asshole to women, and disrespect them. But that's what makes it all the more satisfying when you see a character like that, act out of character. Not that it doesn't fit the situation, but that to see The Jerk, stand up for a friend, and show some virtuous, good traits, makes it feel more rewarding. It's why people love it when Scanlon stood alone against a beast of a warrior, totally outclassed, when his normal response is "run." But not this time, this time he stood alone, as a building burned around him, and stood against a force of evil, simply for the sake that it was the right thing to do. We like seeing characters grow beyond the limitations that they started with. That's why it's called character growth, and an arc. xD And Travis is really good about playing that kind of character, because he does put thought into those things like "What line is this character not willing to cross for any reason? " and then following it up with "now what would be the thing to make him cross that line anyway?" And so it informs the roleplay, and allows you to have those awesome moments.
