So on a 125 are you supposed to let off on the gas completely when going off jumps on the take off???

With any bike you should keep your speed mostly constant. If you let off abruptly on the jump face you'll nose dive in the air. However 125s don't have much engine braking so they are more forgiving then 4 strokes in that regard.
