Fun fact: The French éclair means "flash of lightning," and the scrumptious pastry got its name from the tendency people have to eat eclairs "in a flash." The 19th century Chambers Dictionary famously defined the eclair as "a cake, long in shape but short in duration." An eclair is like a stretched-out cream puff, choux dough...
@gerrym.9354
@gerrym.9354 Жыл бұрын
Thanks Rusty. I've heard some other takes, one that jives with the eating "in a flash", as they were smaller mini-eclairs in those days, another being the shiny chocolate glistened like lightning, and a third being the story of a seaman named Victor Baptistin Sénès (1857 - 1915), a French naval officer and admiral who, in 1891, took command of the French torpedo boat called L'Éclair. Some have speculated, which came first, the elongated torpedo shaped boat ,or the elongated torpedo shaped cake, and is it a mere coincidence that up until the mid 1800s éclairs in France were originally known as "pain à la duchesse" or "petite duchesse" before suddenly becoming renamed as "éclairs"? How's that for wild conjecturing! ヅ

Please tell Mr Chaudhary that if he ever comes to Raleigh, North Carolina USA, not to worry. Even in my "not so large" town, there are Punjabi Restaurants so he can get food that looks and tastes familiar. I wish I could bring his entire family to America for a visit. I once drove from my home 2/3 the way across the Country at an average of 120 kph and it took me 2 full days. America is vast!! From Arctic to Tropical, from desert to rainforest. (and all the natural disasters from each of those climates) Day before yesterday we had a hurricane hit with 240 kph winds and 32 cm of rain in 24 hours.

The "roll" is made from choux pastry, which is a much more involved and temperamental process than standard bread making. The filling in a traditional chocolate eclair is a pastry cream, which again is temperamental and takes knowledge and/or experience to get right. The chocolate is a glaze, which again is temperamental due to the need for it to be liquid at just above room temperature and then it's need to stay set at room temperature after it's been cooled and set. The ingredient list for chocolate eclairs is a simple one but the techniques and knowledge required to actually make them and have them turn out right is far far far from simple.

The rest of the world calls it eclairs. It's a choux pastry.

A long john is a donut (fried dough) and typically made with a whipped topping rather than whipped cream or pastry cream (or a combo of both, which I think is the ideal filling for eclairs). But that's not to say that a good long john isn't fantastic.

Now I want a proper eclair, but they're not easy to find. So many have overly sweet pastry creme filling instead of good custard. There was a place in Saugerties NY about 30 years ago that made the best ones, freshly filled so as to not get soggy, and with just the right amount of not-too-sweet chocolate on top.

@@gerryweed7697 I know my brother. I spent Labor Day Weekend in Cannabis-Friendly-Canada, Toronto 2B specific. Funny thing, it's legal here in NY, and it's legal in Canada but, when crossing the border in Niagara Falls, NY to Canada, if caught with weed, there's a hefty fine? Why? So profoundly silly.

The reason the dough is so yellow is because the "bun" is actually "choux pastry" (the original name is Pâte à Choux in French), which contain a fair amount of butter and egg yolks. It is the same dough used for Profiteroles. Also, a *WAY* better alternative to Éclairs in my opinion, are pastries called Paris-Brest. The same dough is used, but it is filled with soft, light, airy hazelnut cream and topped with vanilla sugar powder and sliced almonds. Less sweet and filling than Éclairs but the taste...

French girl here Nowadays Eclair are not that much sweet. A lot of good « pâtisseries » shop propose the classic Eclairs : vanilla, coffee and chocolate but also some new flavors like raspberry . There is a trend to propose all these patisseries with far less sugar.
