I grew up in a family that never ventured out besides traditional Mexican and American food. I was always curious about Chinese food but my dad (who was stationed in Korea around '67) said that they used dog in their food so we never went. It took my girlfriend to take me to a Chinese restaurant when we were in college when I tried it for the first time. We hit a buffet and I was hooked. I ended up taking my parents to the buffet and they really liked it as well. But they are still stuck in their ways food-wise, while I branched out to Vietnamese, Thai, Indian, Japanese, Korean, Ethiopian, Mediterranean, Spanish, Pilipino, German, etc. I couldn't go back to the same stuff they cooked day in and day out. So I know their plight. It's what expanding your horizons does. Keep up the good work and keeping your minds and palates open!

Being from New Orleans where this is one of our dishes, I will say that this looks great. Let them know it’s easy to make at home. Sauté some onion, bell pepper and celery. Add sausage, chicken or shrimp. Add tomatoe sauce, salt, pepper, garlic, I pinch of sugar, Cajun seasoning and rice. Let it simmer till rice is done. Can even be made in the oven.

Aren't they cute? They're like the nicest, sweetest people ever. And they have such delightful personalities that emerge as they're eating. Some of them try to offer the cameraman food before they eat, some use blessings, some of them are very blank-faced as they try new things only to get very expressive when they're pleased. Then they say that they love or hate the dishes, and I find it very rewarding when we give them a banger. They are adorable men.

Yes Sir, Yes Sir. I just really like their reactions. They are all slightly different people; so of course different "Takes" on the food. My favorite is the late-50's guy with the silver beard and the blue turban. I'm guessing late-50's, same age as me. He's always very polite and cool about things (as are the others). But, yeah... His viewpoints on the various items are always 90% in line with my view(s) on the given item. Also, in this video and I think one other... He openly states that regular food at home no longer means all that much to him. And, yeah.... Most of the items they are eating from our (United States culture generally) are pretty tasty. And, whoever is cooking those items seems to be pretty solid. I mean, that banana pudding; uhm, yeah.... That's my signature dish (meaning I make it well and the kids LOVE it).... And their banana pudding looked to be the same. So, yeah. Whoever is doing the cooking for these guys knows what they are doing.

To me, what makes our food in North America so great is its embrace of many countries around the world. Jambalaya, for example, though evolved in Louisiana, has several historical influences, including French, Spanish, and African. (If you know more about jambalaya, please feel free to jump in!) We are a wondrous mix of cultures and tastes, and our vast diversity of dishes reflects that. You can never fully exhaust the variety; there is always something new to try! Many of the things they've been exposed to can also be made by them at home if only they knew how such as simply frying chicken rather than always having it in a stew or gravy. With the current inflation I've been experimenting with making Depression Era foods. They really found ways to take a small amount of meat and stretch it to feed many but adding fillers such as beans, macaroni and rice. That's the same way that meatloaf came about. You take a pound of meat and add bread or crackers to it and it feeds 6 people. Last night it was salad and "Beans ("Bush's Grilling Beans") and Wieners" on toast and it was actually quite good.

@@SA-hf3fu Many times growing up in the 50's and early 60's, Mom made chipped beef on toast, or creamed peas on toast. Loved 'em both. Dad was a young teacher with a growing family, didn't make much money, and Mom got creative. The only dish Mom made that I didn't like, was when she added bread crumbs to canned tomatoes. I liked my tomatoes plain, but when you gotta feed a family of 6 (this was before baby Sister was born in 1964), you do what you can.

I love these men!! It was sad hearing that they don't enjoy their food as much anymore. You should make them all a cookbook of their favorite recipes , make sure you go by what they have and what they cook with. I wouldn't buy a cookbook because obviously they all don't have a stove/oven or the same cooking methods as we do. A customized cookbook of their favorite recipes would be awesome for them!

Much of the recipes could be done up with pictures. A bigger problem would come in with timing and temperatures as they may not be cooking with similar equipment. I remember inheriting my grandmother's recipes only to find some were impossible to understand as they referred to how much coal or even corn cobs to put in the stove. How am I to translate that to our modern stoves? Or the recipes that called for 5-cents of yeast. I've kept them for the nostalgia.. Sorry for going off topic but I do think some form of picture recipe cards could work.

Having grown up in the South and now living in the Northernmost part of the U.S. I really do miss many of the dishes from my younger days. This video made me miss it all the more. I can make most of my childhood favorites, but even though I've been told I'm a pretty good cook, my dishes just don't turn out quite like my mom's/grandma's. The recipes are mostly theirs, but the love and the soul they put into every dish, just isn't there without them. (sigh) Thank you for this trip down memory lane. It's heartwarming to see the gentlemen enjoying the "strange" foods from far-away places so much. I just hope that they're able to get the recipes from the chef, so they can make their favorites at home. Even if they can't always get every ingredient, the beauty of cooking is how versatile it can be when it comes to its preparation. I just know in my heart of hearts that their versions will be delicious because of the love and care they'll surely put into making them. 😊

In Cajun and Creole USA cooking start with the trinity onion capsicum and celery. Add garlic and spices oregano thyme and rosemary. The meats can be chicken shrimp or crayfish and sausage called Andui. Beef or chicken but most is made with pork. Add rice and stock paprika chillI salt black pepper. It is like a Biryani or a Paella and shows Spanish influences in Louisiana

it's a process. eventually people can get tired of excessive flavors too. it's all about perception, and sadly they are on their own with that. at least they seem grateful to God sometimes, which can help reduce attachment. He could also use this opportunity to better his own cooking--apparently he is already pretty good at it!

Maybe with their knowledge about foreign foods, they'll be able to share it with neighbors until their neighbors will like and be used to some foreign spices and foods. That way, some business men/women in their village might start a business with foreign products etc. Who knows, one day, the spices that they need to make foreign foods will become available due to number of population that wants the foreign dish.
