I think the main difference in American BBQ is the different kinds of sauces from each region. When I lived in North Carolina, most of their sauces are a thinner, vinegar-based BBQ sauce. Other places use tomato-based and mustard-based sauces that range from sweet and smokey to spicey.

Also we use mostly pork and beef with our BBQ - I can’t imagine those spices on mutton or goat but ~ 🤷‍♀️

Good to see Mama Mustapha again! We missed him. He's right about slow-roasted BBQ being best, the meat doesn't dry out if it's done properly. I'd love to have the privilege of tasting some of his lamb rib barbecue.

I lived in North Carolina for 20 years before returning home to Canada. There are many things I miss from that time but I have to say pulled pork BBQ and hush puppies are up there at the top of the list. The vinegar based sauce is my fav!! I desperately miss shrimp and grits too lol, blue crab...omg, the ocean!!

@@Josh-GT yes SC BBQ is a mustard base sauce. Also this video isn't NC BBQ since that would be shredded, or pulled pork not on the shoulder still. That's all this in the video is. Not the served method of the entire Carolina's. But eastern NC BBQ is a more vinegar base, and western NC is a more molasses base ( like a sweet baby ray's type) . Hope this helps! If you go to western NC in Burke County is JDs Smokehouse. Voted best in NC on multiple different voting company/magazines. And eastern NC I would say Lexington BBQ in Lexington NC is highly regarded.

It must be smoked chopped meat to be even similar to NC barbecue. Usually it's pork but we also do chicken and even good vegan barbecue would be much closer than this. NC barbecue is veryyyyy distinct and never on the bone. Always smoked, tender, hand shredded or chopped.

I agree with Mama Mustafa. The meat looked so dry. True BBQ, no matter where its from, when done right, it is moist and succulent. I only wish they could try a real N.C. or Texan BBQ...I think mama would enjoy it.

We do lamb BBQ in Kentucky. Most of us use a thinner vinegar based sauce similar to NC

I am from Panamá 🇵🇦 Central America 🇺🇸 and when the US Military Base was there we had alll Type of Southern BBQ made by soldiers station in Panamá at the Military Base Fair every year and now I am living in Hickory NC and I am still loving my Southern BBQ all kind of meat too 😂😂 Salamalaykum to you guys!!!!

I was born at Fort Kobbe, in Gorgas Army Hospital in 1994. My dad was stationed in Panama for several years and we are originally from North Carolina. Dad went there in 1991 and we came home April 1994.

North Carolina BBQ is distinct because of the sauce - otherwise, the cooking method is the same as other forms of BBQ. BBQ lamb or Goat, like you served in this video, would be VERY expensive in America. It was good to see Mama Mustafa again.. BARELY touch his food! LOL

Mama Mustafa is right, a little salt enhances the flavor of everything. I can understand limiting salt if one has the tendency to overdo, but for those that think any salt at all is bad…surely you must understand, salt is life

Same here! I grew up eating mostly wild game meat in the US. It's a matter of safety when the meat isn't loaded up with chemicals. You learn how to cook well-done and still keep it juicy and tender.

Greetings im from Breckenridge in Colorado... North carolina BBQ is great but as some have said in the comments. Its normally smoked for many hours and then served with the sauce or rub for the region. In NC it should have a tangy vinegar sauce. Next time you all do BBQ have them smoke a chicken and serve it with a nice sweet bbq sauce

I'm not sure who told them that this was NC BBQ but that is NOT our trade mark BBQ. The animal would be slow roasted in it's skin in a cooker for hours and then the meat would be shredded and pulled. Then it would have a sauce added to it. (Vinegar base for Eastern NC, molasses base for Western NC)

Being from North Carolina you can't have North Carolina BBQ unless it is pork. The main cuts are the shoulder, ribs or the whole hog. If you are using goat, lamb or sheep it is not North Carolina BBQ. The way the meat is cooked and the sauces used are for pork.

Now that you're building a girls school, how about adding a room that could accommodate 20 people and organize eating tour? Have the men and women, the stars of "Reactistan", cook a meal! Chef Mustafa would be a hit! Don't forget to have a tin for tips that could go to their own villagers to help kids. And merchandise! BBQ from the Carolina's is generally pork. they aren't having a true representation other than possibly the vinegar/mustard-based sauces and seasonings. That said keep in mind not all spices or sauces work with every type of meat.

Hello ! I'm from South Carolina. Our BBQ sauce is made with yellow mustard . History records that the first BBQ in America was created when Spanish sailors and Native Americans first met . Hogs brought by the Spanish in their ships were cooked over coal fired by the Native Americans in their style . This occured in the area of what is now the South Carolina and Georgia border on the Atlantic Ocean .

Sorry fellas, buT unless you're willing to eat pork you will not be able to have the full North Carolina BBQ experience, however if you substitute the lamb for something like beef ribs then you'll get a closer taste! 🤗

I agree. Salt and pepper, even just salt, is enough for roast/bbq meat. My father came to the U.S. and said what is this sugar on top, and why would you ruin meat with it?

Im from NC , we have places that smoke the meat over a day, and they will sell out by noon . when sold out they close, so first come first served. These places been around over 80 years

Okay so let's get this one straight first of all, that is not American BBQ. As a matter of fact I'm pretty much completely sure that they cook that food there but just in the traditional American Way so if anybody complains about that cooking it isnt us doing it, it's them cooking it wrong. American BBQ is nice and clean looking and just looks and smells awesome. We do BBQ ribs, barbecue chicken, shrimp on the barbie, corn cob, hamburgers, hot dogs, briskets, and sausages. I'm sure I'm leaving a lot of other things out but that's pretty much the number one things that we always cook here in the US. A lot of ways that we cook her done differently like an open flame grill or a smoker which takes hours of cooking and makes it fall off the bone. Some restaurants cook their ribs all night long on a slow-turning rack, which makes it so moist and so good that it literally melts in your mouth. We have tons of different kinds of barbecue sauces and this one just happens to be the Carolina which is supposed to be a mustard BBQ then the usual traditional sweet bbq. I got to say Im totally blanking on what the older gentleman's name is, but he doesn't seem to be the friendliest guy in the world and only has negative things to say about every single thing he tries unless it's from his country. It's a little disrespectful when he pushes the plate away and won't even try it, or when he does try it and spit it back out. Usually only one little bite does it for him though, I'm sure that's because he's a professional connoisseur of foods and it only takes one bite. The two other guys are just great. The way that they play off of each other and have this little back-and-forth really is the only reason I watch these videos, I could go without seeing the other gentleman anymore. You might be the nicest guy in the world, but it's not really coming off like that on the videos. Sorry, nothing but respect to all of you though.

I grew up in eastern North Carolina. I probably have cooked 500 pigs in my life or less. Lamb and pork tastes different. So they are not getting North Carolina barbecue.

The most important aspect of REAL American BBQ is that's the meat is smoked over hard wood which is cooking method called low (temperature) & Slow (for many hours). If its just meat cooked over coals than its not considered REAL American BBQ.

This is not a good representation. It should be chopped or sliced with dip (sauce) and served with barbecue slaw. I have lived in North Carolina all my life, close to Lexington.

I feel like they should try this video again but cook the pork properly in a pit for a day or two which is how eastern carolina style barbeque is traditionally cooked.

The only meat that I eat rare is certain cuts of beef . Steak and more tender cuts are usually rare or medium rare. Tougher cuts are cooked long and slow to encourage tenderness. We also marinate our meat to give it good flavor. Fowl is almost always well done as is pork. I usually try to avoid pork but it is the least expensive meat to buy right now even cheaper than some vegetables.

How it’s cooked is preference in America, it varies but things like Pork and chicken must be cooked all the way through because of parasites that can be found if not cooked through…. Beef has a little more wiggle room in that respect… I prefer my steaks medium/ medium well but I will only eat hamburgers that are well done…(again it’s preference) there are exact temperatures that the meat must get to then it is done whether it’s still a little pink or not… also when smoking meats you will have it cooked through but still have a pink ring as that is the “smoke ring” the smoking causes this… and you should make minimum cuts to the meat to check the inside of you do not have a thermometer… cutting the meat open before it’s had time to rest can cause it to dry out.

Pork falls under the same window of doneness as beef now. It's safe to cook it medium rare.
