I can tell by how hard it is to eat, this pot roast was not cooked properly. The meat should be very tender and fall apart. Cook in the oven at 225F for three to four and one half hours.

They did not cook it long enough. Pot rost beef should just fall apart with a spoon. No need for a knife. Slow cook for at least 4-6 hours.
