One of my favorite dishes! Used to be poor People's food just like chicken wings. Then the hipsters figured it out! The last oxtails I bought were $20 a pound in Idaho!!!

In my country of origin, Ox tail is normally served on a fluffy bed of white rice. And afterwards you go to bed for at least an hour to recover. 😋👍

Yes . Used to put it in Caldo De Res and now it's too expensive. Beef feet went up too ..it's ridiculous . I miss chewing on the nerve

Someone didnt prepare the Ox-tail correctly. When made properly the meat is very tender.

Oxtails aren't tough if they are braised long enough OR cooked in a pressure cooker. They can be amazingly tender.

every kitchen should have a pressure cooker. the heat doesnt have anywhere but towards the bone, hence tenderises meat great.

@@BrodyBaddisAgreed, but if the old type pressure cooker scares anyone, the Instant Pots are great! One can search the meat in there, then start a pressure cooker stage! They are great little apiances!

You notice any difference in texture between slow and pressure cookers? Seems like the pressure cookers aren't quite as tender when I do a corned beef or pork butt.

I love how, even after all this time, they don't have an immediate reaction when they taste something new. They take their time to really taste, experience, and appreciate the food. This is something we all should do.

I'm from the Southern United States, and I grew up with my mom cooking ox tails and serving them over rice. I understand why the gentlemen enjoyed them so much! The part where Chaudhary Aslam Gujjar said "People crave for head and trotters but I'll keep the tail for myself." As well he should - ox tails are quite expensive these days!

Oh that's right , it's not the black owned Jamaican restaurants charging these crazy prices it's some imaginary white man with no connection whatsoever that makes them do it. On a side note, I'm curious why you added Mexicans in there also? You do know that Spanish speaking Mexicans are Europeans of Spanish decent. Another little fun fact since it seems you consider the Spanish part of your little tribe of victims, did you know that out of every 100 slaves sent across the Atlantic Ocean only 3 came to the US the other 97 went to the Latin American Countries like Brazil, Mexico, Cuba, Puerto Rico, Columbia, and Jamaica. Out of 10 million slaves only 1/3 of a million came to America the other 9,650,000 we're bought by your friends the Latinos.

The meat must fall off the bone for it to be properly prepared. Like Ossobuco, it needs slow cooking for quite some time. These are great recipes for the family. Nutritious, and filling. Best with a baguette to wipe all the sauce off of the plate. Bon Appétit

Sear on high heat with a little bit of oil until golden brown. Then add the rest of your ingredients, and bring to a boil. Once boiling, immediately lower the heat so that the liquid is lightly bubbling, and cook on low for 3-4 hours until it's fall-apart tender.

I worry about it too! How he never gets sauce on his white head piece I do not know. I put on a new white top and get taco sauce , salsa, or some other sauce to ruin it everytime!

I grew up eating ox tail when i was a kid 50 cents a pound, now about $13.00 a pound because it was considered poor people food but when the others found out how good they are the price went, Walmart sell them by the cow tongues here in Washington state i had some two nights ago,you just make a thin broth and cover to just above the meat ,crock pot at least 8 hours cook time in an instapot 4 hours , longer cook the more tender meat will fall off the bone so so Yummy ,serve with rice or mashed potatoes goes very well

Chefs made them gourmet and the price shot up. We used to get bones for free at the butcher and make all nutritional both and soup. I couldn't believe my eyes when I saw them start to charge for bones.

Oxtails are very rich in collagen, great for joints , keep skin supple and young, increase muscle mass , good for ligaments, hair and tendons. A favorite in Asian cuisine thats why you see their elderly still ride the bike in their 80s as main mode of transport.

If you're in an area where chicken feet are available, they are very collagen-rich, too. Boil and discard. I know some Asian people actually eat them, but I can't comprehend why. They make a VERY sturdy broth, though. I have been known to pass some chicken feet through an oxtail stew in its early stages (before the oxtails get added), just to make the already rich broth that much more robust.

Oxtails are my favorite piece of beef other than a ribeye steak. Oxtails have gotten insanely expensive now, if you can even find them. The last time I found them it was $13.98/lb and they were the skinny boney end tips. They used to be $3.98 for the nice meaty thick pieces.. I cook them low and slow, for about 10 hours, in a tomato sauce with lots of cilantro and onions.

When I was growing up, we didn't have a lot of money. One of the things my mom used to make was oxtail stew and it was soooooo good! She passed away when I was 14 and I did not have it again for 30 years. One day, my wife made it from an old cookbook and it tastes exactly like I remember. I am very well off, but oxtail is still one of my favorites.

I hope they know that these are an EXPENSIVE DELICACY here in Arkansas, I went to have some and they were $25 for the same plate they ate. I had to settle for a meat patty and some Ting!

Same exact thing out here in Texas. I'll admit: for a $25 plate, you get enough to feed 3 people. Ox tails are a big thing, but very expensive.

I’ve become mostly vegetarian in the past two years, I don’t eat pork for the past 4 yrs and rarely beef (once or twice a year, if that), I do eat chicken but not as often as before, maybe twice a week. Before, I was a meat eater everyday. My consciousness won’t allow me to enjoy it anymore....our factory farming practices are atrocious and depressing, and I personally don’t find anymore pleasure in eating meat because my awareness has evolved. All that said, I admit that oxtails are delicious...nothing compares. Cooked to perfection (they need to be cooked longer, the meat will slip right off the cartilage), they are finger licking good. Makes me wish I was still clueless, lol. My mouth waters watching this, but I know better. No judgment against anyone who still enjoys them though. Enjoy them before you know better too. ✌🏾

Oxtail soup is probably the best soup in the world cooked properly and garnished right with scallions, tomatoes and sour cream. Love ❤ these guys.

Try turkey neck soup with tomatoes (a healthy amount), baby lima beans, corn, a bit of sliced cabbage, and onions (garlic and okra, if wanted). I had a friend who worked at a five star restaurant visiting when I was cooking some. He made fun of me until he tasted it. The next time I visited him, guess what he was cooking?

@@deloachapproach4273 We over here make broth with turkey neck (or chicken, sometimes goose neck) as well as carrots, parsley roots, celery roots, onions, kohlrabi and angel hair pasta. It's nothing quite as fancy but it's wonderful comfort food.

@@deloachapproach4273 Hungary! Poultry broth prepared like that (with some variations) is a staple here. Oxtail soup's a thing, too, although it became a luxury cut here as well since the fine dining scene jumped on it.

@@vaspeter2600 Chicken soup is (or was) a staple in America, too. It is crazy how foods that were once inexpensive have become very expensive. I've always loved chicken wings, and they were once inexpensive, but now that the become very popular, with some restaurants serving only chicken wings as the main course, their price has went through the roof.

This is my comfort food. When the meat falls off the bone and melts in your mouth, it’s euphoric. Miss the days when oxtail was inexpensive.

Mum taught her mother in law to be, the recipe for oxtail stew, as she didn’t know it. Mainly because she was missing the main ingredient, beef ( poor Italian village peasant ) She loved it. Goes great with polenta and the stew is better the next day reheated.

@@Ardoxsho Monteprado. North east of Undine. Reason for not having the recipe was the German imperial army commandeering ( stealing) all the livestock for their army. No point have a recipe for beef when there’s no beef left. That and the cows were more valued for the milk than meat.

Actually my Mum grew up on a farm in Piedmont in the pre-WWII years, and they never ever ate the cattle, or even the chickens, they raised. They were all sold to people in the city. Mum said their only meat was a pair of pigeons every Sunday. Beef only became widespread in Italy with US food aids after WWII.

Oxtail. Remove any excess fat (not all of it) Heat a little oil in a cast iron pot, dust the tail pieces with flour, brown a few pieces at a time, put aside. Brown 2 large sliced onions, garlic, chili, ginger salt pepper to taste, turn heat down to low, replace meat add chunks of carrots ( natural sweetness that helps soften meat) cover ingredients with beef stock. Cook slowly for 3 hours checking on liquid and touching up if needed.. This can also be placed in a medium oven with a cast iron lid on. Tip, if you don't like meat on the bones, remove it and shape into a Pattie after cooking time 👍🍖❤️ For those who are allowed, with stock add two cups of good quality red wine.. And don't worry about the alcohol in the wine because the heat will evaporate any alcohol... I serve oxtail with fluffy rice 🍚💕

I grew up eating oxtail stew and oxtail soup. I just can't believe how expensive they are now. They are right up there with premium steak prices. I switched to osso buco (beef shanks) because it's meatier and not as expensive.

Ox tail is very popular in England. When cooked very slowly the meat will eventually fall-off-the-bone.

Oh yes, my mum used to make oxtail regularly, but cooked very slowly so it fell off the bone. We also had liver onions and mash regularly as well, though unlike school my mum knew how to cook liver just right, back in the day liver at school was like shoe leather lol

@@MagnoliaMS70 It is literally the beefiest beef stew you will ever eat. Deep, rich beef flavor you simply cannot get from ordinary stew meat. The incredibly rich beef flavor is because of the fact that the tail works so much. Muscles that do lots of work are tougher but have more flavor. The cow's tail is in flyswatter mode 24/7 for the life of the animal, so the muscles of the tail are both extremely tough and extremely flavorful. Brown the oxtails savagely before adding to the stew - brown them as brown as you can get them without burning them. Then simmer them for 1-2 hours (or all day in a crockpot). If you've never tried them, throw in some sliced parsnips at the same time as you add the other vegetables. Parsnips taste like a cross between a carrot and a sweet potato, and they go marvelously in this stew. A handful of pearled barley or farro added to the stew is lovely as well. The stew goes oh so well with crusty bread and something red and sparkly.

Oxtail are much loved in my family. We do not eat them very often unless they are on sale or it's a special occasion. They make a delicious broth as they stew low and slow.

When my man looked at the cameras silently and started licking his fingers, I knew it was a done deal!!! Oxtail is my favorite, although I've only had Jamaican preparations. I wish theirs was cooked a little longer, but I'm so glad they enjoyed it. That's good eatin!

Is this a Jamaican recipe? I hope you didnt serve them oxtail without scotch bonnets ... Jamaican oxtail stew is like the best thing on the planet. It used to be consumed by poor people, and was an extremely inexpensive way to get meat protein into the diet. Stewed slowly with butter beans, onions, garlic, thyme, allspice and other spices to make a brown gravy with the signature scotch bonnet pepper in it, and served over rice it is both nutritious and tasty. Now it is a delicacy and the oxtail is so expensive the poor Jamaicans cant afford it anymore. Dont deprive yourself of this exceptional dish... traditionally served over rice (I have never seen it over mashed potatoes) with a side of steamed cabbage it is a complete meal that truly is a treat. I like it so much I now grow those specialized peppers.

African Americans eat them as well. But oxtails are very expensive here. They are a treat or special occasion meal. It costs me $125.00 just to make a pot. We eat them with rice or potatoes cooked in the pot with the oxtails or in a stew.

My dear brothers, glad you all enjoyed the oxtails. Our family ate oxtails on Sunday, at least once or twice month. It was very, very inexpensive meat. The meat was tender, juicy, almost sweet, sticky but finger-licking good. Today, oxtails are considered a delicacy and comfort food. Would you believe 7 lbs. (3.18 kgs.) of oxtails cost about $20 to $25 USD.

Ox Tail is very expensive here in New York City. A few weeks ago my brother asked me why is ox tail so expensive? I said , I don’t know 🤷🏽‍♀️. So he asked the chef. The chef said, the ox tail is expensive because the ox only has one tail. If the ox had 4 tails and one leg, the leg would be more expensive! 🤣😂🤣 I’m not sure if that is true but it was a great answer! 😆 However, if the ox tail is tough, it was not cooked long enough. The meat should be very soft and fall off the bone easily. We stew it with butter beans and make a lot of gravy, and serve it with rice and peas with a side of steamed vegetables or salad, and fried plantains. Yummy 😋

Saying that is kinda confusing, since eating with your hands is fine. Would you pick up a bowl of rice, and use chopsticks to push rice into your mouth? Ummm, Chinese or Korean? If you're Korean, leave the bowl on the table, and use a spoon. See? It's all relative. Figure out the culture, adapt, and enjoy!

I believe they use it to pick up all food in place of cutlery. So to have a meal without bread is weird for them. Imagine getting a meal without cutlery. You'd be asking for it.
