This looks so good. Love West Indian food. The oxtails look like they are so tender and you put all the favorites in the pot that I would use. The only thing I would suggest is add a little flour water to the gravy and thicken it up. My grandma, my aunts, taught me how to make home made gravy and trust me, my gravy has always been on point!

Spoon off most of that grease and add flour to thicken the gravy. Probably should have trimmed the fat off the meat prior to cooking.
