Lol, I would be shocked if you couldn't find any spring beauties, I have them growing in my yard! I'd like to do a video on harvesting trout lilies as well, and hopefully can in the near future. I love curry too! Muenster cheese is my Mom's favorite cheese so that's awesome! My favorite cheese is pecorino or manchego, but I love all cheese I've ever had! Actually yes, they are though I personally don't enjoy the stems very much some people do. The leaves and flowers are great added to salads or really any way you'd use fresh greens from the store.

I spent most of my early life, and childhood in Southern Ohio, in the Clermont, Brown County areas, within five miles of the Ohio river. There, is the "Garden of Eden" for food plants. Spring Beauties were/still are, one of the most common, wild edibles there. In fact, I have seen entire lawns of nothing but Spring Beauties. With a digging stick, I can literally harvest 5 pounds of these tubers, in around an hour. That's not counting the green plant. Some I find, are as large as a flattish, disk shaped golf ball sized, tuber. Most are around the size of a thumb nail. In places I call "Old growth" spring beauty patches, where there are roughly a pound of greens leading to the tuber, those are the largest. "Old Growth" patches tend to have a little space between the clusters, and provide the largest tubers. I like to "skin" my tubers, with a soft, scotch brite pad, and cook them with the greens, in just a little wild onion, butter, salt, and pepper. The texture, is very creamy, tasting superior to both potatoes, and chestnuts. The greens, are among the best tasting greens in the plant world. Second (barely) only to Stinging Nettles for flavor. Southern Ohio, is probably the best place I've ever been, with not only the biggest variety of wild edibles, but the biggest quantity, finest quality of wild edibles. This is due to the sub-tropical climate near the river, extremely rich, black, deep soil, of that region. There is a reason that Eden Park in Hamilton County, near Cincinnati, was named "Eden Park". Early Catholic Monks, and Cardinals who settled in the area, say that due to the lush forests of Clermont County, and the deep, fertile woodlands, the sub-tropical climate, and the rich Flora, that it must be part of God's "Eden", that he saved for himself. Between the eastern suburbs of Cincinnati, to Portsmouth Ohio, within 15 miles of the river, and the adjacent area of Kentucky, Is the best place to find wild edibles in the U.S, and possibly, the world. Just a note. You should've taken and eaten the spring beauty greens. BTW, they do NOT taste like a "potato", the texture is different, and they taste closer to a roasted, European chestnut.

It sounds very similar to my area with the amount of plants available. A few differences of course like Spring Beauty. There's a lot of them here and you could literally pick for days, but I've yet to have the success rate you mentioned. You are blessed to be able to have so many around, especially at such a good size. I've never eaten the greens until this year and they are quite delicious. I might make a video on it this year or next. I only mentioned potatoes because it's the only comparison I have because I've never eaten a Chestnut before and many wild edible authors describe it the same way. I'll look into Chestnut though and see if I can scrounge some up. Thanks for sharing your knowledge, it's always appreciated!

@@TrilliumWildEdibles You're welcome. Unfortunately, I've only found a couple of American Chestnut trees making nuts throughout the years. However, there are a couple of similar tasting things to spring beauty bulbs. European chestnuts, roasted til the nut is soft and creamy, or a Jackfruit seed, cooked the same way. I used to teach outdoor survival to military personnel, with the MOS for it, for 25 years as a GS Civilian. Edible plants are one of the most important things I taught. I've seriously eaten most of the wild edibles in this country, including some things almost completely unknown to most foragers. I just wish I had the time to make a KZbin channel myself. My favorite edible plants are Stinging Nettles, Spring Beauties, Cane (bamboo) shoots, pignuts, acorns, pecans, and hickory nuts. Orach, on the west coast, along with Soaproot, are delicious. Dulce and other seaweeds on all our coasts are a nice edible. Currently, I have curly dock, Amaranth and sheperds purse growing in my yard. Just outside of town, Agarita right now is available. Greenbriar, and Texas persimmons are excellent. We even have the odd, Guava bush growing in our area, but it takes a good deal of luck finding fruiting ones. I've lived on OH, NV, CA, W.V, TX, and have foraged in virtually every state in the Union, including AK, and HI. Nowhere have I found the abundance that you find in Southern Ohio, Northern, and Eastern KY, and southwestern W.WA. You do good work. Please keep it up. :)

Glad I saw trilium today and thought of you youtube has stopped showing when you release new videos. I recently moved to TN right near the smoky mountains so I have much more opportunities to get back into the woods and find some fresh food. KZbin's recommendations are way out of whack. I can't remember the link to their official blog post on it but essentially the algorithm decides what to show subscribers based on what they watch, not who they are subscribed to. It's pretty crappy for viewers and creators, but since it's a new system and they're getting a lot of negative feedback I hope it will change soon. I'm glad you have more access to land for foraging, especially in the beautiful land of the Smokies! The meal was amazing! Sometimes, while watching your videos and enjoying them to the level of joy , I keep waiting and hoping that you’ll pick some of that plant, take a bite of it, chewing and swallowing it, and share with us live that taste, aroma, and texture.. and I’m talking about the raw , fresh plants , that could be eaten that way . until I see some of that, I’ll keep at my happiness and gratefulness learning from your videos .

Great video Josh. Will have to see if spring beauties grow around here. I picked several green briar tips the other day. Have you tried them? Taste like a cross between green beans and asparagus. Also has 20% protein.

I have had greenbriar shoots, they are delicious! I sauteed mine in butter for a few minutes and seasoned with salt, pepper, and garlic. I can agree with you on the taste, they are reminiscent of green beans with asparagus. I've seen others mention the protein in them but have been unable to find that info online. Do you remember where you read that? Either way thanks for asking and commenting Archer, it's always appreciated!
