Great hunting! I do have a question tho - what does the flour do for cleaning the meat? I've never seen that before. I'm used to us Haitians using lime/lemon & salt and I know some on the other Islands do too, but I've never seen flour used.

The flour works fine because it cuts the fresh and absorbs the blood however the lemon alters the taste of the meat and makes it stiff sorry for the late response hope you subscribe and this was helpfull
