This is part of my Christmas Lunch menu. Grew pigeon peas in my backyard especially for Christmas Day; it was a fun gardening activity. Thanks for sharing your method and recipe! Gonna try it your way! Grateful that you didn't stew the pigeon peas - the less sugar, the better! My one addition to this is gonna be a bit of freshly grated ginger. Just an umph to give it a bit of warmth.
