Have you heard of burdock roots? Probably not. It's an under-rated root vegetable that doesn't get too much attention in the culinary scene. But it is a very healthy vegetables - famous for being effective in detoxifying blood, lowering blood sugar and fighting infections. Many people in Korea enjoy it as a hot tea. But today, I wanted to show you how to cook with it. Here's a few dishes that are simple, delicious and healthy that you can add to your banchan repertoire!

I have some burdock root I grew over the Fall and I have been looking for ways to cook it. I think I will try the burdock and carrots in a rice bowl!

Hey for anyone trying the second recipe, I have a note to add. If you find the sesame oil smoking like me, that’s because sesame oil has a low smoke point. It can be fixed by adding in a neutral cooking oil like canola.

Yeah I don't fry with sesame because of that. I use it as a drizzle for flavor after.

canola is without merit. Use coconut oil or avocado oil ... or just about anything but rapeseed oil, which is what canola is.

Thanks! I keep seeing these roots at a local grocer, and always wondered what they were, and what I could do with them. I finally remembered to look it up when I got home, and this video was the most promising search result. the first time I ate burdock root prior to making a tincture, it tasted to me like fresh peas from the pea viner. So nice.

What do you mean "take over" because I was just about to plant some... Do they just go nuts and pop up like rabbits year after year? I know they grow almost like a weed which is why I want them. I am a lazy gardener...but if they are going to take over and get all crazy then I might have second thoughts.

@@peterlamont647 oh yes! For me they do, but my backyard is part hillside that connects to a municipal road on a slope, so the medium there is perfect for them and other deep rooted weeds often seen along roadside embankments.

Whole Foods, Farmers Markets, Health Food Stores, or you can purchase Frontier Herbs Dried Organic. I think for dried, you use half the amount of fresh.

The Apple Bottom Booty sold me. I came across this cause I found Wild Burdock in my roommates back yard and its flowering now. Asked the Universe what kind of flower it was and was lead to Burdock. And here. Looks so good cause I recently tried Parsnips and was pleasantly surprised.

Are the roots good to dig up anytime? Half my outdoor sitting area was overtaken by burdock and I need to chop it all down fast before the burs with seeds grow. They destroy hair clothing etc. I always thought the leaves were cool but are they good for anything except crafts like with the leaf pattern in the concrete? What about the stems..hmm Thank you for the root recipe! 😁

I’m not so advanced yet I’m not sure how long after pulling them out they can be prepared if immediately or do they need to dry out? Is it different for different recipes? Are they only good during early emergence or after the plant is fully grown? I pulled many out of the ground yesterday but had no clue what to do with them because I wasn’t prepared to use make them yet so I just left them on my outside table to dry out. I guess now that I’ve done that, I’m probably limited to making them into tea.

@@FutureNeighbor he loves cooking 😊😊. At 7, he already knows so much about food. My husband is also foodie, but he is not experimental. I am vegetarian, but have learnt non vegetarian dishes only because of the feedback I got from my little one. Love 😘😍

I just subscribed to your vlog!!! I would like to use leaks for your last burdock dish. Maybe add raw honey instead of white sugar, Himalayan salt instead of regular salt!!! Gobo or Burdock by itself is very healthy!, but if you can, use healthy ingredients instead like msg free soy sauce!!! Keep it up!!!, you're doing great!!!

there might be burdocs growing around, theyre super common and invasive, all you need to do is dig pretty deep to grab the roots

Hi, I would love to try these recipes but I am highly alegic to basically all seeds that can be used to make oills and soy. Are there any alternatives to soy sauce? And could I use chrushed Tiger Nuts for the nutty flavour you mentioned instead of sesame seeds?

Does burdock absorb a lot of liquid (e.g. mushrooms) or does it stay rather dry unless boiled in the 3rd recipe?

I think it's similar to potatoes. It will soak in flavor if stir-fried or boiled~ But the best part of burdock is that it keeps that crunch and chew~~ even after frying.

I love burdock, but I can only purchase it in larger quantities, so it's nice to have a couple of new ideas for it. The first recipe is quite similar to the one in have for gobo kinpira. It's one of my favorites for my lunchbox 🙂.

Dan-yul, why sugar AND honey? I don’t ask because I’m the sugar police, please believe me. But why 2 sweeteners? Doesn’t 1 do the trick? I see this often in Korean recipes. Thanks.

Hey Rosie! Yes, the honey is more to get a sticky texture. Many homecooks in Korea actually use a syrup called oligodang (which is oligosaccharide) to get that sticky finish... but I prefer a more natural substance like honey. You could of course skip the honey... but the veggie may start to release water afterwards.

Sure! Spring onion (대파) has a wide stem and a strong onion flavor - it's great for flavoring oil. Green onion (쪽파) is much thinner and milder - good to use for garnish. We don't use leeks in Korean cookings too much.

I've used burdock root before but peeling it really turned into a chore and put me off using it for a long time. I'm excited to see that this step isn't necessary. Looking forward to trying it again!

Here in S Spain burdock grows wild (it's a weed) but nobody eats it. Shame. I live in the city, so no one around me would be able to identify it. You say it's sweet, but on NHK all the cooking shows tell you to soak it in water "to remove the bitterness", so until I can find some somewhere I'll never really know.
