Just to clear up the baking powder vs. soda thing: Baking SODA is sodium bicarbonate and it creates carbon dioxide when it reactes with something acidic like lemon juice or buttermilk. That way it makes the batter more airy. The thing is that it does not work without any acid in the batter. Baking POWDER is baking soda + acid, so you do not have to add anything else acidic.

Adding that your baking soda can overreact and ‘fall’, which is why some recipes call for both to be used to provide extra lift/make sure it rises evenly. Or why changing the flavor/amounts of your acid can accidentally ruin a batch. Learned that the hard way in my baked goods journey lol

So when they said that neither Laurens nor Zacks were muffins I was just so shocked because those are the most muffiny to me. But as I said I live in Europe, we have different food and food traditions here. If Americans have savory muffins that's totally cool and also if you say a sweet muffin is a cupcake/cake in my ol European heart I only know sweet.
