why do you use the elgato 4k to link to the computer? everything I read you can just use the ATEM mini pro or iso to connect the cameras without this added expense. Have you had issues with connecting just the ATEM by itself? Sorry for so many questions I am just starting to get going with multi cam setups so, curious on if i need this extra piece.

(About) how much should we expect to spend on a 3 camera setup like you described?

This is not an inexpensive setup. You'll see the prices for the equipment as you visit each of the links they provide. Although, you can accomplish something similar for a lot less ... or for a lot more. It just depends on what you're trying to accomplish. For example, you could accomplish something similar with laptops and webcams and the same ATEM Mini they are showing. This can feel less expensive if you already happen to have a few laptops around and you add a $50 webcam to each. Short story: there's more than one way to pull off this kind of setup.
