Maraschino cherries are derived from croatian marasca cherries, and they are really bitter and gross fresh so they started using them to make Maraschino liqueur which was the primary way to preserve them until US prohibition, then after prohibition they started to preserve them in a new, non-alcoholic, mix of sugar-syrup(which is infused into the cherries and used to "brine" them), and almond bitters/extract and ... So traditionally there actually isn't corn syrup in proper maraschino cherries, and you actually can't sell preserved cherries under the Maraschino name in the US if it doesn't specifically only have the red dye, sugar-syrup, and almond flavoring, and marasca cherries specifically. Any wayyyyy..... cherry garcia and strawberry cheesecake enjoyers rise up!

My only maraschino fact is that a bunch of bee keepers in New York noticed that their bees were making bright red honey that was too sweet. It turned out that a maraschino cherry factory was disposing of their waste improperly and the bees were getting to it. Unfortunately, the factory owner was also running a weed operation out of his factory and killed himself during the raid.

I work at the original factory in hospitality and I've tried a bunch of flavors and know a BUNCH of info on the company, flavors, and history. I will say that the vanilla is so good is because they add 4x the recommended amount because Ben can't taste really well! I don't know if you've tried this flavor yet. But if you're a fan of pistachio ice-cream without the pistachios try greentea ice-cream. It's a little more sweet but almost the exact same flavor without any added chunks. Blue bunny or any Japanese brand of it is legit my favorite ice-cream.

I used to get this from a Chinese restaurant in my city that no longer exists. I never really knew what flavor it was (green tea, or pistachio lol) because it seemed to have the tiniest little crushed pistachio on top but tasted green tea. It was definitely homemade. I think about it often.
