There is a famous win with Gelfand starting with 7. a4. The mainline includes 4 queens and is extremely complex. I believe it’s actually now trendier than 7. 0-0 as there are still unexplored ideas for both sides.

At 7:12 my instinct is to cash in the pawn, but I never gambit so maybe need to work on sensing when you're about to trade down to something boring and equal. You didn't even mention that as a move, which was curious.
